Sacha Inchi (Plukenetia volubilis linneo) is a native oil plant in the Amazon region of Ecuador, but in the last twenty years plantations have spread throughout the country, especially in the warm and humid areas of the Ecuadorian coast. The plant has been cultivated by indigenous people for centuries, has been part of the diet of ancient local (ethnic) groups and eaten as "frijoleada" (grilled beans). The Sacha Inchi is a climbing plant that grows up to two meters high. The leaves have a length of 10 to 12 cm, a width of 8 to 10 cm and blooms after five months of planting. The fruits are stars consisting of four, five and six capsules containing the seeds. The fruits are green, but become blackish brown at maturity. The seeds are cm in diameter and weigh about 1.2 to 1.6 grams, are oval shaped. Their seeds contain approximately 36 to 40% oil and have been used in human diets within the region. Recently there has been a growing interest in the NUTRACEUTICAL properties of Sacha Inchi. Sacha Inchi belongs to: Family: Euphorblaceous Genre: Plukenetis Species: Volubilis The fruit is commonly known in the Andean region as Inca peanuts, Inca Inchi, Sacha Inchi, Sacha peanuts, Inca peanuts. The virgin oil of Sacha Inchi is obtained from the seeds of the plant of the same name (Plukenetia volubilis Linneo) by mechanical process and does not imply any chemical treatment in its extraction or refining. Sacha Inchi oil is the richest known vegetable source of polyunsaturated fatty acids: linoleic acid (Omega 6) and alpha linolenic acid (Omega 3) which are essential for humans since they can not be synthesized in the body and must be Ingested in food. Sacha Inchi oil is remarkably different from other vegetable oils, with a high proportion

2 of polyunsaturated fatty acids, such as soybean oil, sunflower oil, olive oil, etc. Sacha Inchi is a rich source of polyunsaturated fatty acids: oleic acid (35%), linolenic acid (48%) and mono unsaturated acid, oleic acid (9%), and naturally contain vitamin E. The oil has an exceptionally low content of saturated fatty acids (7%) which makes it a very healthy product. Categorization of Sacha Inchi Oil The extra virgin vegetable oil of Sacha Inchi, is cataloged as NUTRACEUTICO because it is a natural product that has beneficial actions on the organism. It comes from sustainable crops, non-transgenic plants, is ancestral and is considered a safe product. Oil composition of Sacha Inchi. Total carbohydrates present are <0.1% and total proteins <0.5%. The polyunsaturated fatty acids (83.0%) are mainly alpha linolenic acid (48%) and linoleic acid (35%). The monounsaturated fatty acid is about 9.5%. 5 Omega 9 -. It is a monounsaturated fat, also known as oleic acid. Unlike the omega 3 and 6 the body produces it and yet they are beneficial in food. It has been proven that omega 9, can contribute to decrease the risk of cardiovascular disease and stroke. They have been shown to raise HDL ( "good") cholesterol and lower LDL ( "bad") cholesterol; Therefore, facilitate the elimination of plaque buildup in the arterial walls that may be the cause of a heart attack or stroke.
