4 Increased Omega-3 Soybean Oil Food companies should expect more soybean oils that will be functional yet healthful, including increased omega-3 soybean oil. Research shows that diets rich in omega-3 fats reduce inflammation and may help lower risk of heart disease. 1 The main source of these fats in the U.S. diet is soybean oil, which provides omega-3s in the form of alpha-linolenic acid (ALA). 2 However, the body does not efficiently convert ALA to the desired long-chain omega-3s. These preferred forms of omega-3s are eicosapentanoic acid (EPA) and docosahexanoic acid (DHA), which are easier for the body to process. ALA CONVERSION CHART [ The body skips the ALA conversion step when consuming products made with SDA-enriched soy. 5 SDA-RICH OMEGA-3 SOYBEAN OIL COULD HAVE A SIGNIFICANT IMPACT ON PUBLIC HEALTH. 3,4 While EPA and DHA are found in fish and shellfish, these sources are limited in the U.S. diet. Americans need additional omega-3 sources to gain the benefits. Researchers are developing soybeans with increased levels of stearidonic acid (SDA) omega-3s, which are converted into EPA more efficiently than ALA omega-3s. The food industry can use SDA-rich omega-3 soybean oil to improve a wide variety of products, including soups, sauces, dips, spreads, beverages, yogurts and breads.

6 Availability In 2009, the FDA confirmed SDA-rich soybean oil s Generally Recognized As Safe (GRAS) status for use in foods and beverages. Pending final approval from the U.S. Department of Agriculture, farmers will begin growing SDA-rich omega-3 soybeans. INCREASED OMEGA-3 SOYBEAN OIL IS AVAILABLE FOR TESTING.

7 DEDICATED TO THE FUTURE OF EDIBLE OILS The 70 farmer-directors of the United Soybean Board oversee the investments of the soy checkoff to maximize profit opportunities for all U.S. soybean farmers. These volunteers invest and leverage checkoff funds to increase the value of U.S. soy meal and oil, to ensure U.S. soybean farmers and their customers have the freedom and infrastructure to operate, and to meet the needs of U.S. soy customers.
