NB: Levulinate is food additive approved by the FDA. As a calcium salt, it is used as an oral and intravenous source of calcium supplementation. Research Mentor, NTRN 601 Special Problems: Research, January 2012 August 2012 Mentored one graduate student in a bench science research project Activities included teaching (i) analytical techniques using GC- and LC-MS methodology, (ii) the use of stable isotope tracers in metabolic research studies, (iii) the development/design of animal research protocols and organ perfusion techniques, and (v) data analysis and interpretation. Instructor, NTRN 363 Human Nutrition 1: Energy, Protein, Minerals, August 2011 December 2011 Instructor for undergraduate course focused on (i) macronutrients and minerals (e.g. experimental basis of human requirements, metabolic roles, and clinical signs/symptoms of deficiency and toxicity),

PhD Student, August 2008 August 2011 Investigated the metabolism of levulinate and its conversion to 4-hydroxypentanoate (a drug of abuse and analog of 4-hydroxybutyrate), in perfused rat livers, liver subcellular preparations, and in live rats. Identified the pathway of levulinate and 4-hydroxypentanoate catabolism in mammalian cells using metabolomics and mass isotopomer analysis. Characterized the potential toxic effects of calcium levulinate (± ethanol) on intermediary metabolism. LeCharles Bentley O-Line Academy, Avon Ohio Consultant Dietitian, November 2009 May 2010 Developed sports nutrition education materials on macronutrient intake, hydration, supplement use, and snacking guidelines for participating football athletes. Analyzed the nutrient composition of diets for athletes requiring weight maintenance, loss, or gain.
