1 Curriculum Overview There are fur distinct categries f cursewrk requirements that must be met by all Certified Nutritin Specialist candidates. 1. Nutritin Curses at the Graduate Level (9 semester credit hurs) 2. Bichemistry Curses at the Graduate/Undergraduate Level (6 semester credit hurs) 3. Physilgy/Anatmy Curses at the Graduate/Undergraduate Level (3 semester credit hurs) 4. Clinical r Life Science Curses at the Graduate/Undergraduate Level (12 semester credit hurs) Curses cannt fulfill multiple curriculum requirements; hwever, excess nutritin science curses can fulfill the Life Sciences requirement. Credits are recrded n the standard semester hur basis. Candidates shuld calculate accrdingly if their schl recrds n a quarter hur r ther basis. The fllwing defines each categry and prvides examples f curses that wuld be accepted t fulfill each categry: 1. Nutritin (9 semester credit hurs at the graduate level) Nutritin is the science that interprets the interactin f diet, macrnutrients, micrnutrients and ther biactive cmpnents in fd in relatin t maintenance, grwth, reprductin, health and disease in humans. It includes dietary patterns, fd intake, absrptin, assimilatin, bisynthesis, catablism and excretin. Curses that fulfill the nutritin cursewrk requirement include, but are nt limited t: Pathphysilgic Basis f Metablic disease: A study f the underlying mechanisms f disease and the cmplex interrelatinships between critical systems including respiratry, urinary, cardivascular, digestive, nervus and endcrine. Lectures will include fluid and electrlyte imbalances, acid and base imbalances, inflammatin, hypersensitivity, infectin, necrsis, and neplasms. The influence f varius nutrients n systemic functin will be stressed. Functinal Medicine Nutritin: Advanced bichemical assessment using critical analysis f client histry with clinical testing frm a functinal medicine perspective. Functinal lab testing will be evaluated in detail with case studies. Tpics will be relevant t preventive as well as therapeutic nutritin care. Macrnutrients: Carbhydrates, Fats and Prteins: Explres the physilgic mechanisms f carbhydrate, fat and prtein metablism, the functin f macrnutrients in the bdy, hw each macrnutrient (alne and when cmbined) underges integrated metablism in tissue, and hw the ingestin f cmbined macrnutrients affects verall metablism as well as disease risk and recvery. Suggestins fr client cunseling n these issues will be presented. Develpmental Nutritin: Nutritinal cnsideratins and health-related cncerns thrughut the life cycle are explred. Pregnancy, lactatin, fetal, infancy, childhd, and adlescent grwth and develpment are addressed in detail, in this cntext. 2 Therapeutic Nutritin: Fcus is n the use f nutritin therapy in the management f health and disease. Specific nutritin interventin including diet, vitamins, minerals, btanicals, essential fatty acids and amin acids are explred fr a wide variety f diseases cmmnly encuntered in clinical practice. The bichemistry f each interventin is discussed fr a full understanding f hw t integrate nutritin therapy int patient care. Nutritinal Aspects f Disease: Advanced study f pathphysilgical aspects f disease states and the relatin t nutritin. Human Nutritin II: Micrnutrients: This curse cvers structure, functin, and fd surces f the micrnutrients (vitamins, minerals, trace minerals, and varius phytchemicals). The cmplex functin f each nutrient is reviewed, alng with interactins, excesses, deficiencies, supplementatin, and nutrient synergy. The effects f fd prcessing, frtificatin and agricultural practices n micrnutrient density f fds will be explred. Students use a variety f methds t cmpare the micrnutrient cntent f diets and will review safety and txiclgy f dietary supplements, drug-nutrient, and nutrient-nutrient interactins. Nutritin Onclgy: The prcess f carcingenesis will be reviewed t prvide the fundatin needed t address the rle f nutritin in the preventin and treatment f cancer. The curse will prvide challenging discussins abut cntrversies in dietary expsure assessment using questinnaires and bilgical markers in cancer risk assessment. The curse will als explre the bilgy f nutritin and cancer including nutrigenmics, nutrigenetics, epigenetics, and energy balance. Further, the evidence frm specific fds, macrnutrients, micrnutrients, dietary trace metals, and ther fd cnstituents will be explred. Bichemistry (6 semester credit hurs) Bichemistry is the study f the structure, functin and interactins f cellular cmpnents such as prteins, carbhydrates, lipids, nucleic acids, and ther bimlecules and the chemical prcesses that these bimlecules underg in living rganisms. Bichemistry fcuses n hw these bilgical mlecules give rise t the prcesses that ccur within living cells, which in turn relates greatly t the study and understanding f whle rganisms. By cntrlling infrmatin flw thrugh bichemical signaling and the flw f chemical energy thrugh metablism, bichemical prcesses give rise t the cmplexity f life. Tpics t be included in curses that fulfill the bichemistry cursewrk requirement include: Chemical cmpsitin and classificatin f carbhydrates, prteins, and fats Bichemical principles as they relate t nutritin Energy prductin and regulatin Nrmal regulatin f fluid and electrlyte balance and the metablic implicatins arising frm disturbances in fluid/electrlyte balance Regulatin f acid-base balance and the metablic implicatins arising frm acid/base disturbances Mechanisms f gluc-regulatin, free radical generatin and inflammatry pathways and their relatin t nutritin Cncepts f nutrigenmics and epigenetics and the impact n nutritin and health Please nte: Organic chemistry and micrbilgy d nt fulfill this requirement. Hwever, these curses can fulfill the life sciences curriculum requirement. Examples f Bichemistry Curses include, but are nt limited t: Bichemistry f Nutritin: Reviews the static and dynamic aspects f the bichemistry f carbhydrates, lipids, amin acids, prteins, nucleic acids, hrmnes, and vitamins in the healthy individual. Catins, anins, enzyme kinetics, and integratin and cntrl mechanisms f the varius metablic pathways are discussed. Clinical Bichemistry: The bichemistry f disrders arising frm acid/base imbalance and the abnrmal metablism f the carbhydrates, lipids, prteins, amin acids, nucleic acids, bile pigments, vitamins, and hrmnes. Nutritin: A Bichemical and Physilgical Basis: Digestin, functin, and metablism f prteins and amin acids, carbhydrates, and lipids. Regulatry mechanisms, develpmental changes and species differences that influence the requirements and metablism f nutrients. Effect f nutrient supply n metablism at the mlecular, cellular, and systemic levels, including special metablic needs during grwth, reprductin, stress, and senescence in animals and man. Medical Bichemistry: Prvides a strng fundatin f the bilgical cncepts f metablism, cellular signaling, DNA replicatin, transcriptin and translatin, and mlecular genetics. 4 Nutritinal Bichemistry and Physilgy: Mechanisms f nutrient digestin, absrptin, transprt, utilizatin, and excretin will be reviewed with emphasis n the rle f specific nutrients in maintaining bichemical and physilgic integrity in bdy systems. Advanced Nutritinal Bichemistry, Pathphysilgy, and Assessment: This curse explres mre advanced and cmplex issues surrunding nrmal and abnrmal metablism f nutrients. Students will view a variety f pathlgical states at the mlecular and bichemical level, including impaired detxificatin, cancer, neurdegenerative diseases, and autism. The impact f dietary additives and envirnmental txins n human health will be explred. Students will demnstrate cmpetence in the selectin and interpretatin f labratry assessments fr nutrients, enzyme assays, abnrmal metablites, lading tests and challenge tests. 3. Physilgy r Anatmy/Physilgy (3 semester credit hurs) Anatmy is the study f the structure f the human bdy and its parts. Physilgy is the study f hw rganisms, rgan systems, rgans, cells and bimlecules carry ut the chemical r physical functins that exist in a living system. Develping a fundatinal knwledge f these sciences is essential fr understanding the rle f nutritin in health and healing. Examples f curses that will fulfill this requirement include, but are nt limited t: Anatmy and Physilgy I, II: Detailed study f the structure and functin f cells, tissues, and rgan systems, cntrl systems f the human bdy, hmestatic mechanisms, and the interrelatins between these systems. Anatmy: The curse prvides students with a detailed examinatin f all structural aspects f the human bdy with a special emphasize n the anatmy and anatmical relatinships significant t cmmn clinical cases. Medical Physilgy: The fcus is human medical physilgy as it pertains t human health. A virtual labratry, highly fcused n health prblems, accmpanies the curse. Nutritinal Bichemistry and Physilgy: Mechanisms f nutrient digestin, absrptin, transprt, utilizatin, and excretin will be reviewed with emphasis n the rle f specific nutrients in maintaining bichemical and physilgic integrity in bdy systems. Health and Wellness Physilgy I: Students will learn the physilgical theries supprting the practice f cmpetent, safe, and effective nutritinal medicine within the cntext f a bipsychscial health and wellness mdel. Students will becme familiar with fundatinal physilgical prcesses and relevant anatmy including: digestin and assimilatin, bitransfrmatin and eliminatin, circulatin, prtectin and defense, tissue repair and maintenance, and infrmatin flw. Physilgical prcesses will be understd in relatinship t behaviral and envirnmental inputs such as physical activity, scial netwrks, diet, and sunlight. Circadian and seasnal patterns in physilgy als will be discussed alng with a review f the life cycle. 4. Clinical r Life Sciences (12 semester credit hurs) Life sciences encmpass any science that deals with living rganisms, their rganizatin, life prcesses, and their relatinships with each ther and their envirnment. 5 The life sciences are helpful in imprving the quality and standard f life. They have applicatins in health, agriculture, medicine, and the pharmaceutical and fd science industries. There is cnsiderable verlap between many f the tpics f study in the life sciences. Scial r behaviral science curses d nt fulfill the requirement fr clinical r life science. Examples f curses that will fulfill this requirement: include, but are nt limited t: Techniques in Epidemilgy and Bistatistics: Epidemilgy techniques used fr analysis f ppulatin data frm surveys, as well as case cntrl retrspective and prspective studies will be reviewed. Bi statistical techniques including crss tabulatin, scatter diagrams, histgrams and line plts, regressin and crrelatin analysis, analysis f variance, discriminant analysis, factr and spectral analysis will be applied t clinical and experimental data t illustrate techniques available fr data analysis and interpretatin. Intrductry Organic Chemistry: Examines the cmpunds that cmprise mst living mass. Fllwing an intrductin t cvalent bnding and ismerism, mves int a detailed discussin f the mlecular structures and prperties f varius classes f rganic and ther bilgically imprtant cmpunds. Research Methds and Applied Statistics: Typical methds in analyzing bimedical data using descriptive and inferential statistics. Prvides cmpetence in develping research studies, cnducting statistical analyses and literature reviews. Bdy in Health and Disease: Micrbilgy and infectius disease, immunlgy, cardilgy, pulmnlgy, nephrlgy, endcrinlgy, neural science, gastrenterlgy and hepatlgy, hematlgy, nclgy and rheumatlgy. Mlecular Metablism: This mdule f the Fundatins in Bimedical Sciences curriculum fcuses n the bichemical, cellular and mlecular mechanisms that regulate cell and tissuespecific fuel metablism. The curse will present an integrated view f bichemistry and the cntrl f cellular and rganismal functins with regard t nutrient utilizatin. Mechanisms that allw cells t survive variatins in nutrient supply (starvatin, feeding, and nutrient stress) and metablic derangements that cntribute t disease pathgenesis (e.g. diabetes, besity, cancer) will be discussed. Cells, Mlecules, and Genes: This curse integrates mlecular and cell bilgy, bichemistry, and medical genetics by using clinical cases t illuminate the material. The curse includes the fllwing tpics: gene expressin, signal transductin, cell cycle regulatin, rganizatin f cytplasm, membrane traffic and cell mtility, prtein structure and functin, energy prductin and utilizatin, and intermediary metablism. Basic genetic cncepts and the rle f genes in disease prcesses and susceptibilities incidence and brad spectrum f human genetic disease, the imprtance f taking a family histry, and the prcedures used fr diagnsing genetic diseases. Principles f Functinal Medicine: Presents the fundamental cncepts f functinal medicine, including genetic predispsitin t illness, bichemical individuality, envirnmental factrs (nutritin/diet, xenbitics, exercise, physical trauma, psychscial changes), physilgic functins and imbalances, triggers and mediatrs f illness, and cmmn clinical imbalances.
