8 Freeze Drying How freezing affects emulsions? (1) The growing ice around the droplets forces them together leading to the formation of bigger droplets before the oil crystallises. (1) (2) Cryoprotectant: molecule capable of inhibiting or slowing down the ice crystal growth Ice Crystals (2) When growing, the ice crystals invade the oil droplets and weaken the interface which will lead to instability after rehydration.
