1 ACID & ALKALINE BALANCE ph reflects the concentration of hydrogen ions (positively charged molecules) in any given solution. I am sure most of you know what it is like to have your life out of balance. Like, too much work, not enough fun. Well, the same is true for your body. Research has shown that when your body is highly acidic, illness and disease grows and thrives. When your body is more alkaline it is able to work at an optimal level and fight off illness and disease. If you want to reclaim the balance (your health) and gain A healthy, functioning body, energy, mental clarity, clear bright eyes and skin, and a lean trim body you want to eat a diet high in alkaline foods. The Standard American Diet (SAD) is contributing to an increase in obesity, illness and diseases such as cancer, arthritis, diabetes, chronic fatigue, depression, fibromyalgia, allergies and heart disease. These are preventable! And that is the key PREVENTION. Diet is one of the answers to healthier living and a slim physique but it must to a diet that properly balances your body chemistry. As body temp is rigidly regulated, the blood must be kept in a very narrow ph range mildly basic or alkaline. The body goes to great lengths to preserve this balance, including wreaking havoc on other tissues or systems. 1
2 As stated in The ph Miracle : The ph level of our internal fluids affects every cell in our bodies. The entire metabolic process depends on an alkaline environment. Chronic over-acidity corrodes body tissue, and if left unchecked will interrupt all cellular activities and functions, from the beating of your heart to the neural firing of your brain. THE SCIENCE OF ACID/ALKALINE BALANCE WITHIN THE BODY All food digested in our bodies metabolizes, or burns down to an ash residue. This ash residue can be neutral, acidic, or alkaline (basic), depending mostly on the mineral content of the original food. - Potassium, calcium, magnesium, sodium, zinc, silver, copper and iron form basic ash - Sulfur, phosphorus, chlorine and iodine leave an acid ash Most elements are alkaline Acid Foods: In general, animal foods meat, eggs and dairy are acidifying. So are: - Processed and refined foods - Yeast products, grains - Artificial sweeteners - Some fruit - Sugars - Alcohol - Coffee and black tea - Chocolate, black tea - Sodas 2
3 Alkaline Foods: All vegetables Alkalizing fruits include: Lemon, lime, avocado, tomato, cucumber and bell pepper. Sprouted seeds, some nuts (almonds) Grains: Millet, buckwheat and spelt Raw foods are more alkalizing; cooked food is more acidifying The food pyramid we were all taught is very acidic. FRUITS In the book the ph Miracle the author instructs people to avoid fruit while they are trying to bring their body back into balance. He suggests lemons, limes and unsweet grapefruit When lemons, limes, grapefruits are metabolized in the body they have an alkalizing affect. They contain an abundance of oxygen. The sugar that fruit contains ferments like any other sugar. Lemons and limes are chemically acid but when they are metabolized in the body they actually have an alkalizing affect. They have very little sugar and contain an abundance of oxygen. Microforms do not live well in the presence of oxygen, so these foods prevent microform overgrowth. Tomatoes and avocados are higher alkaline but when tomatoes are cooked they become more acidic. Avocados are a great monosaturated fat as well as containing protein and they contain more potassium than bananas. 3
4 To maintain a balanced ph in your blood and tissues, your diet should consist of at least 70-80% alkaline foods and no more than 20-30% acidifying foods At least 70-80% should be raw About ¾ of your plate alkalizing foods. Over-acidification of body fluids and tissues seems to be the basis of all disease, and general dis-ease of the body. When the body is acidic it is vulnerable to germs. When the body is at a healthy alkaline (base) balance, germs can t disrupt the health of the body. In the blood, it takes about 20x as much base to neutralize any given amount of acid, so it is better and easier to maintain than to regain balance. The ideal blood ph is You can also measure ph of urine and saliva, but the blood is the most important and needs to stay within tightest range. Different areas of the body have different ph requirements. - Blood and tissues should be slightly basic (alkaline) - Lower bowel - slightly acidic - Urine - slightly acidic or neutral - Saliva tends to be erratic The ph of urine can provide the best estimate of what s happening in the body s tissues but it is not always accurate. Blood ph is more reliable and better indicator of internal conditions. 4
5 HEALTH PROBLEMS THAT ARISE FROM OVER-ACIDITY IN THE BODY Weight gain problems, allergies, fatigue, mood disorders, neurological imbalance and sugar metabolism problems and infertility, arthritis and rheumatoid arthritis, just to name a few. Common symptoms: Heartburn, bloating, belching, feeling full after eating small amounts of food, insomnia, water retention, migraines, constipation with diarrhoea, fatigue, burning sensation on tongue and in the mouth and halitosis. Respiratory problems: Allergies, congestion, excess mucus, postnasal drip, frequent clearing of the throat, habitual coughing, sore throats, ear-aches, asthma and bronchitis. Lowered immune system catch everything that goes around. All the body s regulatory mechanisms (including breathing, circulation, digestion, and hormone production) work to balance the delicate internal acid/alkaline balance. Our bodies cannot tolerate extended acid imbalances. Symptoms During Early Stages of Imbalance: Skin eruptions, headaches, allergies, colds, flu and sinus problems As condition becomes more serious: Weakened systems and organs of the body begin to give way, which may result in dysfunctional thyroid glands, adrenals, liver, etc. If tissue ph becomes too acidic, oxygen levels decrease and cellular metabolism will stop. 5
6 When the body begins to lose balance and become to acidic: - Alkaline minerals are pulled out of our tissues to compensate. (sodium, potassium, calcium and magnesium) - These minerals react with acids, and create less detrimental substances, which are then eliminated by the body. The body maintains a reserve of these alkaline minerals for emergencies. But if the diet does not contain these on an ongoing basis, these minerals are recruited from elsewhere. They are actually pulled from the bone (as with calcium) or from muscle (magnesium). So now the muscles and bones are deficient in these important minerals. This leads to varied symptoms. If the acid overload gets too great for the blood to balance: - Excess acid is dumped into the tissues for storage. - The lymphatic (immune) system must then neutralize what it can and get rid of everything else. - To get rid of the excess acid from the tissues it dumps it right back into the blood This creates a vicious cycle of drawing out still more basic minerals from the ordinary functions of the body and stressing the liver and kidneys. If the lymphatic system is overloaded, or its vessels are not functioning properly (from lack of exercise), acid builds up in the tissues. Can you see why most North Americans have health problems? 6
7 STAGES OF BREAKDOWN OF THE BODY This imbalance in the blood ph. Leads to irritation and inflammation Which sets the stage for sickness. Acute or recurrent illnesses result from either the body trying to mobilize mineral reserves to prevent cellular breakdown or emergency attempts to detoxify the body. The body throws off acids through the skin, producing symptoms such as: Eczema, acne, boils, headaches, muscle cramps, soreness, swelling, irritation, inflammation and general aches and pains. After the body has done all it can to neutralize the acid imbalance chronic symptoms arise. When acid wastes build up in the body and enter the bloodstream, the circulatory system will try to get rid of them in liquid form, through the lungs or the kidneys. If there is too much waste to handle, they are deposited in various organ systems, including the heart, pancreas, liver and colon or stored in fatty tissue, including the breasts, hips, thighs, belly and brain. This process of acid waste breakdown and disposal could also be called the aging process. 7
8 CANDIDA Acid waste also sets the stage for the potentially devastating affects of a host of microscopic organisms in your body, starting with Candida. Yeast and fungus (and closely related mold) are single-celled forms of plant life that inhabit land, air, and water. They are absolutely everywhere. Candida and other microforms take advantage of the body s weaker areas, poisoning and overworking them. In an acidic environment, they basically get free rein to break down tissues and bodily processes. Bacteria, yeast, fungus and mold do not themselves produce symptoms in the body their toxic wastes do. They only show up because of a compromised environment. Mosquitoes seek the stagnant water, but do not cause the pool to become stagnant. Ruldolph Virchow (MD & Pathologist) Most diseases, especially chronic and degenerative ones, follow microform overgrowth. Microforms thrive in acidity! They also love the low oxygen levels that come with acidity. (chlorophyll supplies oxygen as well as being extremely alkaline chlorophyll in green leafy and grasses) 8
9 When your body goes from acid back to base, yeast, fungus and mold stop growing and revert to being benign. Their leftover toxins can then be bound up by certain fats and minerals and eliminated from the body. What Rudolph Virchow believed and others believe since him: Germs of the air may contribute to illness, but they are not, contrary to popular belief, necessary for illness to occur. Their negative effects are simply added to the compromised environment already existing in the body. To contract infection, you have to be predisposed to it internally. You have to have some of the bug already in your system, and you have to have the acidity to allow it to take hold. QUESTION OF PROTEIN AND AMINO ACIDS There is plenty of protein in plants. If you are getting enough calories to be healthy, and you are eating a reasonable variety of foods, you re getting enough protein. There was a clinical study published in the Journal of the American Dietetic Association that analyzed the diets of meat-eaters, vegetarians who eat dairy and eggs, and pure vegan vegetarians using strict requirements about how much protein would easily cover the requirements of growing children and pregnant women. Not only did all 3 diets provide enough, they all actually doubled requirements. The take home message is no one has to worry about getting enough protein if you eat a normal amount of reasonable foods. Regarding complete amino acids Vegetables carry all the amino acids (the building blocks of protein) the body needs. Not every vegetable has every one, of course but if you 9
10 are eating a wide variety of vegetables, especially dark green and dark green leafy vegetables, and supplementing with grasses (barley, wheat grass, etc), you are getting plenty of all the essential amino acids. The body has a free amino acid pool, which contributes about 70 grams of protein daily. Signs of protein deficiency: Brittle nails, hair falling out, loss of muscle tissue Complete proteins: Hemp Seeds, Chia Seeds, Nutritional Yeast Hemp: 25-30% protein. Omega 3 s. Fantastic nutrition Chia Seeds energy food. Aztecs and Mayans used it. Omega 3 s, vitamins, minerals, antioxidants. Highest protein of all seeds. Nutritional yeast is rich with b-complex vitamins (not a raw product) Quinoa well balanced amino-acid profile. Great source of magnesium. Green Plant Foods vs Animal Foods (from Eat to Live) It is not merely eating empty-calorie food that causes disease nor is it merely the high consumption of animal foods such as dairy, meat, chicken, and fish that leads to premature death in America. These factors are important, but the most CRITICAL is what we are missing in our diets by NOT EATING ENOUGH PRODUCE. Nutrient Density of Green Vegetables: Which food has more protein broccoli or steak? Steak 5.4 grams protein per 100 calories Broccoli 11.2 grams of protein per 100 calories Broccoli HAS 2 x AS MUCH 10
11 Important to NOTE: Most of the calories in meat come from fat; green vegetables are mostly protein. Animal products = Calorie dense and low in nutrition GREEN VEGGIES ARE THE MOST NUTRIENT-DENSE OF ALL FOODS! VEGETABLES Veggies are some of the lowest-calorie, lowest-sugar, most nutrient-rich foods on the planet. They provide vitamins and minerals, fibre, chlorophyll, enzymes and phytonutrients. Veggies are excellent sources of the alkaline salts that protect against microform overgrowth and the associated mycotoxins as well as help neutralize acids in the blood and tissues The chemical components of chlorophyll are similar to that of human blood. It helps the blood cells deliver oxygen throughout the body. It reduces the binding of carcinogens to DNA in the liver and other organs. It also breaks down calcium stones stones that the body creates to neutralize and dispose of excess acid for elimination. Chlorophyll is present in dark leafy green veggies, grasses (wheat grass, barley grass, etc), seaweeds and algaes (where it is highly concentrated). ENZYMES IT IS VERY IMPORTANT to chew your foods extremely well. Different enzymes are called upon according to the foods eaten, depending on the type of food and how it was processed. Whatever the enzymes within the food can accomplish in the way of digestion makes less work for the digestive enzymes in the body. 11
12 Heating over 118 degrees destroys enzymes. Cooked food requires the body to produce all the necessary enzymes, creating an unnecessary stress on the body and diverting resources from other jobs the body must perform. From the book Eat To Live Researchers from the Department of Biochemistry at Wright State University School of Medicine concluded that most foods undergo a decrease in nutritive value in addition to the well-known loss of vitamins when cooked and/or processed. Most vitamins are heatsensitive. For example, 20-60% of Vitamin C is lost when a food is cooked, depending on the cooking method % of minerals are lost. Wheat grass contains more than 100 food elements, including every identified mineral and trace mineral and every vitamin in the B-complex family. It has one of the highest pro-vitamin A contents of any food, and is rich in vitamins C, E and K. Wheat grass juice is 25% protein, a higher % than in meat, fish, eggs, dairy products or beans. Barley Grass boasts 4x as much thiamine (b1) as whole wheat flour, 30x as much as milk. It even has more Vitamin C than oranges (7x as much Vit C). 12
