2 Aspartame Aspartame is approximately 200 times sweeter than sucrose and supplies a sugar-like taste. It is used worldwide as a single sweetener and in blends with other high-intensity sweeteners. Aspartame is built from amino acids, commonly present in natural food proteins and is digested by the human body in the same way as proteins are. The most rigorously tested sweetener is approved in over 120 countries in the world. 3 Acesulfame-K Acesulfame-K is approximately 200 times sweeter than sucrose. It is often blended with other sweeteners to give a more sugar-like taste and for the synergistic effect by which the blend is sweeter than its components. Acesulfame-K is stable under heat and has good solubility. 4 Sucralose Sucralose is approximately 600 times sweeter than sucrose. It is the only high-intensity sweetener made from sugar and tastes like sugar. Sucralose has great heat stability and is stable in acidic and alkaline products. It is a non-toxic, non-caloric and non-cariogenic sweetener, which has no effect on carbohydrate metabolism. 5 Stevia Steviol glycosydes, commonly known as Stevia, are extracted from the leaves of Stevia Rebaudania Bertoni by water/alcohol extraction methods. The Stevia extracts are approximately 200 to 300 times sweeter than sucrose. The sweeting property is mainly produced by the glycoside compounds Stevioside and Rebaudioside A. Steviol glycosides are ph and heat stable and provide no calories. 6 Erythritol Erythritol is a polyol and is naturally present in some fruits and fermented food. Erythritol is a natural sweetener with approximately 70% of the sweetener power of sucrose. It has an attractive cooling effect and can mask unwanted aftertastes. Erythritol has non-hygroscopic properties and good thermal and chemical stability. It is non-toxic with a caloric value of 0.2 kcal/g. 7 D-Xylose D-Xylose is obtained from plant cell walls and fibre and it is commonly called wood sugar. D-Xylose is water-soluble and has the same flavour as glucose. It is used as the raw material for hydrogenation to produce Xylitol. D-Xylose can inhibit odours and increase the sweet flavour of foods. 8 Polydextrose Polydextrose is a water-soluble, synthetic polymer of glucose. It is widely recognised as a dietary fibre with prebiotic properties. Polydextrose is often used as a low-calorie bulking agent, and can improve the texture and mouthfeel of foods. Polydextrose has a low glycaemic response and only 1 kcal/g.
