When healing or treating disease and particularly cancer, nutrition is of utmost importance. What you eat directly influences how you heal and process stress. In a stressful time, it is hard not to create more dis-ease in the body however choosing what you eat carefully can greatly influence how your mind and body cope and heal. Eating for healing is the same as eating for health and thus, is the same as everything I mention in this guide however, there may be certain tweaks depending on what type of cancer you have. The general outline for those with cancer will be increasing intake of foods like beans, legumes, blueberries, carrots, cruciferous vegetables (broccoli, cauliflower, Brussels sprouts, cabbage, collards, kale, kohlrabi, mustard greens, radishes, rutabaga, turnips and horseradish), flaxseeds, garlic, kelp, reishi/shitake/miatake mushrooms, wheatgrass, ginger and all other raw vegetables, particularly those high in fiber. In cancer healing it is most useful to avoid animal protein, dairy products, hydrogenated fats and oils including fried food, food additives, processed foods, cured meats containing nitrates, processed sugar, alcohol and tobacco products. Green Veggies Aim for 5 servings daily or a high quality greens powder. Green drinks such as barley or wheat grass juice are sources of chlorophyll, which inhibits the leading trigger of skin cancers. Green vegetables are also powerful detoxifiers of the blood and plant fats such as sterols and sterolins found in all fruits and vegetables are being studied as immune modulators that benefit cancer patients. Folic acid, found in green leafy veggies works as a preventative in colorectal cancer. Indole 3 Carbinol, found in the cabbage family reduces activity of potentials harmful hormones such as estrogen. Excess estrogen exposure is the primary cause of breast cancer and thought to contribute to prostate, colorectal, and other common cancers. In addition to the indoles, the cabbage family (broccoli, cauliflower, Brussels sprouts, cabbage, bok choy and kale) also provide isothiocyanates which detoxify and protect the body from carcinogens and directly kill cancer cells. Different types of cancers will be treated slightly different. Depending on the type of cancer, cells are more and less sensitive to things like sugars and proteins. That being said, the general outline of a vegan diet has been proven in research to always reduce cancer risk and promote healing. Meat and Cancer Countries with a higher intake of fat, especially fat from animal products, such as meat and dairy products, have a higher incidence of breast cancer.13,14,15 In Japan, for example, the traditional diet is much lower in fat, especially animal fat, than the typical western diet, and breast cancer rates are low. In the late 1940s, when breast cancer was particularly rare in Japan, less than 10 percent of the calories in the Japanese diet came from fat.16 The American diet is centered on animal products, which tend to be high in fat and low in other important nutrients, with 30 to 35 percent of calories coming from fat. When Japanese girls are raised on westernized diets, their rate of breast cancer increases dramatically. Even within Japan, affluent women who eat meat daily have an 8.5 times higher risk of breast cancer than poorer women who rarely or never eat meat.17 Two themes consistently emerge from studies of cancer: vegetables and fruits help to reduce risk, while meat, animal products, and other fatty foods are frequently found to increase risk. Consumption of dietary fat drives production of hormones, which, in turn, promotes growth of cancer cells in hormonesensitive organs such as the breast and prostate. Meat is devoid of the protective effects of fiber, antioxidants, phytochemicals, and other helpful nutrients, and it contains high concentrations of saturated fat and potentially carcinogenic compounds, which may increase one s risk of developing many different kinds of cancer.
Vegetarian diets and diets rich in high-fiber plant foods such as whole grains, legumes, vegetables, and fruits offer a measure of protection.5 Fiber greatly speeds the passage of food through the colon, effectively removing carcinogens, and fiber actually changes the type of bacteria that is present in the intestine, so there is reduced production of carcinogenic secondary bile acids. Plant foods are also naturally low in fat and rich in antioxidants and other anti-cancer compounds. Not surprisingly, vegetarians are at the lowest risk for cancer and have a significantly reduced risk compared to meateaters World Cancer Research Fund. Role of lifestyle and dietary habits in risk of cancer among Seventh-day Adventists. Cancer Res. 1975;35(suppl): HOW DO I TRANSITION TO A PLANT BASED DIET? Step One It will be beneficial if you first ask yourself if you are ready to accept and take in new information. Are you ready to be humble and authentic and trust something new? It s a big step, it s the first one. If you are looking for a quick fix to health and happiness congrats! You ve found it! However, you will only truly find it if you authentically trust and surrender to a (potentially) new way.
AM I READY? Step Two Start eating everything from the earth that you enjoy. Start incorporating more whole earth foods. Earth foods are foods that came straight from the earth. This is no limitation, no hidden secrets or rules. The guideline is to pick whole foods, in their original form and at their purest quality. This includes all fruit, vegetables, nuts and nut butters, seeds, honey, maple syrup and simple oils virgin oils. That s means dropping all of the low-everything rules you ve heard. I want you eating carbohydrates, fats, sugars and proteins from plant sources. I am telling you to eat potatoes, bananas, avocados, peanut butter, oats, bananas and rice. The secret is to gradually keep incorporating these foods into your diet and not focusing on remove anything. Think of new ways you can eat more simple foods. Consider adding an apple alongside breakfast or a banana as a snack. Try adding raw nuts to a salad or steaming baby potatoes with dinner. Think simple. With dinner in my house we all get a little bowl of sliced up veggies + fruit on the side. My husband, myself and our two small children all love that we do this. This little bowl generally has bell pepper or carrot sticks with sliced apple or pear. Depending on what I have in my fridge I will give them grapes, celery, cucumber, cherry tomatoes, pineapple or banana. This is an easy way to get in some extra earth foods. By focusing on adding more high quality food in instead of removing anything you are letting out a sigh of relief inside that you do not have to restrict any of the food you currently love. Go ahead and eat what you normally do, by adding in simpler choices you end up slowly wedging out the foods that do not serve you. EAT EARTH FOOD Step Three Believe it, earth food is the secret. It is put here for a reason, to heal and nourish us. Earth food gives us the exact nutrients that allows our body to function. Coincidence? We are meant to eat it. The more you believe that and breathe it into your being the faster you will move towards optimal health. No matter how many calories or carbohydrates are in a food, when it is man-made with synthetic chemicals it will not take us to health. Highly processed foods confuse our bodies, put stress on our organs and demands a ton of energy simply trying to deal with the food. That energy could be spent on proper digestion, detoxification, healing, regenerating, growing, losing weight, etc. If you think of our body as a machine that needs certain chemical compounds (vitamins, minerals, oxygen, water etc.) to live it makes sense that the type of food you eat is most important factor. If you don t eat the right type, you aren t getting these essential nutrients. If you don t eat whole earth foods, you aren t getting these nutrients. Nutrients in processed foods are either synthetic or highly heated or both, which means your body has a hard time using them. Breathe this information into your every day life. Avoid any consideration to fat grams, sugar grams, calories or carbohydrates instead put all that energy into finding new fruits, vegetables and grains that you enjoy and noticing how it makes you feel. When you truly believe this, it will all make sense. BELIEVE IT After these steps, the rest is up to you. Keep exploring, keep trying new simple foods. Anything with one ingredient or in its whole form. I suggest reading, watching documentaries, hiring a professional and seeking information. Google vegan recipes and find some new delicious dishes. I don t need you to be a vegan however those recipes will always be plant-based and generally the healthiest recipes you can find.
o OPTIONAL CLEANSE TO ALLOW HEALING GUIDELINE 1 large glass of warm lemon water each morning consisting of pure water and the juice from half of an organic lemon Load up on onions, garlic and cruciferous veggies: o Arugula o Bok choy o Broccoli o Brussels sprouts o Cabbage o Cauliflower o Chinese c o Collard greens o Daikon radish Eat organic whenever possible Drink 3L (.79 gallons) water/herbal tea per day a b b a g e o Horseradish o Kale o Kohlrabi o Mustard greens o Radish o Rutabaga o Turnip Watercress
All fresh fruit and vegetables encouraged in large amounts Fresh juices (made with a juicer or bought cold pressed) ANY organic food from the earth is encouraged including; potatoes, quinoa, oats, rice, high quality maple syrup (No 3 dark), beans, real nut butter, raw nuts, dried fruit (with no added sugar/oil), corn, fruit such as apples, berries, peaches and bananas. All fresh and dried herbs are encouraged and have detoxifying properties Other foods with detoxifying properties: cinnamon and other spices, curry, curry paste, ginger, basil, cilantro, parsley, lemon, lime, flaxseed, chia seeds and black organic coffee (up to 3 cups daily). OMIT Alcohol Microwave use Processed foods; sugar, packaged food, food additives and preservatives: basically nothing pre-made. Animal products (includes all meat, fish, eggs and dairy) Gluten containing food such as wheat, spelt, kamut, farro and durum, bulgar and semolina, barley, rye and triticale. Gluten free grains corn, millet, rice, sorghum. Gluten free options are amaranth, certified gluten free oats, buckwheat, quinoa. EATING RAW/FRESH Cooking destroys enzymes that are essential to human health; without those enzymes, we're not getting the full, life-supporting benefits of our food. Raw temperature, the natural enzymes in food are destroyed. Enzymes are essential for all the chemical processes in your body, especially digestion. In addition, when the nutrients in food are heated it causes Raw food is food that has not been cooked or exposed to temperatures over 118 F / 47 C chemical reactions and the higher the heat, the more volatile, or destructive, the chemical reactions. Unnatural chemical by-products with damaging effects on health are produced by cooking. For example, cooked carbohydrates can turn into a carcinogen called acrylamide, a chemical used to make plastics and dyes that has caused cancer in animals - the higher the cooking temperature, the greater the levels of acrylamide. Frying, one of the worst kinds of cooking, makes oils oxidize creating harmful free radicals and increasing the risk of cancer, heart disease and premature aging. Ironically, frying also destroys the Vitamins A and E which we need to protect us from free radicals. By eating raw and fresh, you are eating alive. Alive foods aid in detoxification. Simple. WHAT TO EAT DURING A CLEANSE (or everyday!) DAIRY SUBSTITUTES: Any plant milk is acceptable such as unsweetened & pure rice, coconut, almond, cashew, hemp or hazelnut milk. GRAINS: Brown rice, wild rice, millet, quinoa (actually a seed), oats & buckwheat. After the detox if you wish to re-introduce gluten and take note if any symptoms arise such as digestive distress, sluggishness, aching joints; these can be indicators of gluten sensitivity. PROTEIN: Quinoa, edamame, raw nuts and seeds, natural nut butters, lentils; chickpeas; black other variety of whole beans. There is also protein in most grains, with oats being the highest at 26g per cup! RAW FRUIT & VEGETABLES: I encourage as many raw fruits and vegetables as you can eat! Include raw vegetable plates with lunch and dinner, if desired: eat mono-meals (a meal consisting of one thing, like 6 apples for lunch or 5 bananas for breakfast), make smoothies using whole, raw, fresh ingredients. This detox will focus on raw fruit and vegetables. Do not be afraid of fruit and the sugar content of fruit! Fruit is from the earth and filled with fiber and loads of cleansing properties. You cannot eat too much fruit on this cleanse!
SMOOTHIES: I encourage as many fresh smoothies as possible with a recommended 3 per day. Summer is the best time to enjoy large amounts of fresh, local fruit and veggies. Buy large amounts of fresh fruit to use on this cleanse. Breakfast and lunch with be smoothies with optional additional acceptable (from the Eat as much as you can category). How do you make a smoothie? Start with 1 or 2 bananas, add a large handful of another fresh (preferably local!) fruit and add a fresh green and top with water. Blend and enjoy. This is a beginner recipe, feel free to get creative with things like ginger, spinach, parsley, lime, cayenne, pineapple, etc. You can enhance detoxification and protein by adding ground flaxseed or chia to your smoothie. You can also use 100% pure coconut water or milk instead of plain water if you desire. If you do not like bananas or cannot eat them, pick another fruit instead. Bananas add most of the sweetness to the smoothie so you may have a more tart smoothie without banana. EAT AS MUCH AS YOU CAN All raw vegetables & fruit Brown rice Buckwheat Herbal tea Oats Quinoa Water Alfalfa Apples Avocado Beets Blueberries Broccoli Cabbage Celery Chamomile tea Curry Dandelion, greens or tea Flaxseed, ground Garlic Ginger AVOID Additives/preservatives Artificial sweeteners Dairy Packaged food (tofu accepted in moderation) Red meat Gluten containing foods ESPECIALLY GOOD DETOXIFYERS Grapefruit Grapes Green Tea Kale Kiwi Leeks Lemon Milk Thistle, tea or capsules Onion Papaya Parsley Pineapple Wheat grass
