2 PALMSURF GMS Glyceryl Monostearate: The Versatile Food Emulsifier. PALMSURF Glyceryl Monostearate or GMSs are commercially manufactured via esterification between palm derived palmitic (C 16)/stearic (C 18) acid and palm-based glycerine. It is a mixture of mono-acylglycerols, with variable quantities of di- and triacylglycerols. With the characteristic structure consisting of both water- and fat-soluble, the use of PALMSURF GMS is widespread in the food industry as an emulsion stabilizer, dispersing, anti-stalling agent and other unique functionalities. PALMSURF GMS merely make up minor parts of the food product, however, they have a crucial impact on the sensory characteristic and storage stability.
