4 The Science behind the perfect bake! I learned to bake with my grandmother. From that first batch of fairy cakes, I found something magical in the way that a combination of a few simple ingredients can produce something so delicious. I sadly lost my grandmother to bowel cancer some years ago but even now when I put on my apron I remember fondly all our afternoons spent baking together. This Bara Brith is one of the first things she taught me to make. You don t need a load of fancy equipment, just a bowl, a baking tin, and something to stir with. 5 Rise to the challenge Method Ingredients 175ml cold black tea 225g mixed dried fruit 225g self-raising flour 150g demerara sugar 1 tsp mixed spice 1 large egg In a large bowl, combine the fruit and tea and leave to soak overnight. The next day, preheat the oven to 170 C/325 F/Gas 3. Line a 900g/2lb loaf tin with baking paper. Add the remaining ingredients into the steeped fruit mixture and beat until combined. Pour the mixture into the prepared loaf tin and bake in the middle of the oven for 1 hour, or until a skewer inserted into the middle comes out clean. Beth's Brilliant Bara Brith! Tips If the cake is browning too quickly, cover with foil and continue baking. If you don t have time to soak the dried fruit overnight, use freshly brewed hot tea and soak for 30 minutes (or as long as you can allow). Don t drain any unabsorbed liquid before you add the rest of the ingredients.
