Participants will learn ways to balance their diet with a variety of foods that are good sources of nutrients to promote good health. Cooking exercise and a take home bag filled with samples of Super Foods. Monday, May 18 th, 2015 Topic: Whole Grains for the National School Lunch and Breakfast Programs. Class Time: 3:30 p.m.-6:30 p.m. Class Fee: $ Certified Clock Hours in Key Area 2 (Nutrition) This course will outline the whole grain-rich criteria for school meals. The USDA and the FNS have created this resource to
3 reflect the 2010 Dietary Guidelines for Americans which recommends that children and adults consume at least half of their grains from whole grains. Samples from InHarvest and Whole Foods. DVD and Power point presentation plus food samples to enjoy at the viewing of this presentation. Tuesday, May 19 th, 2015 Topic: Food Safety Basics 4 Certified Clock Hours in Key Area 1 (Operations) Qualifies for the Renewal of Manager s License by the Minnesota Department of Health. The Food Safety Basics course is designed to provide school nutrition managers, employees and substitute cooks the basic understanding on food safety enabling them to begin the job using safe food handling practices. Participant Workbook included in course fee. Wednesday, May 20 th, 2015 Topic: Meals in Minutes-Wrap and Roll Class Time: 3:30 p.m.-5:30 p.m. Class Fee: $ Certified Clock Hours in Key Area 1 (Operations) Learn many unique ways to prepare easy food called wrap and roll. Simple, healthy recipe for vegetable tarts, chicken lettuce wraps, breakfast burritos, easy calzone or pocket sandwiches and quesadillas for breakfast and lunch. Team nutrition cook books to take home and share with family, friends and coworkers. Thursday, May 21, 2015 Topic: Produce Safety Class Time: 3:30 p.m.-6:30 p.m. Class Fee: $ Certified Clock Hours in Key Area 1 (Operations)
4 Enjoy this 3 hour presentation by the NFSMI filled with power point presentations on Produce Safety. Topics of interest school gardens, handling and service, produce quality, purchasing and receiving and storing of produce. Each participant will go home with a booklet and DVD Produce Safety by the NFSMI. Saturday, May 23 rd, 2015 Topic: Serving it Safe Class time: 7:30 a.m.-11:30 a.m. MN Department of Health then continuing on until 3:30 p.m. for the full 8 hour certificate for Level one. 4 Hour Core Requirement for Level 1 Certificate and Qualifies for the Minnesota Department of Health-Renewal of the Food Managers License. Must stay and complete the remainder of the time until 3:30 p.m. to complete the full 8 hour requirement for Level One. SNA requirement for certificate program. for the MN Dept. Of Health Class for $85.00 for the full 8 hours Certificate. Breakfast and Lunch provided by the instructor. Participant workbook included in the course fee.
