Most effective in patients with less severe symptoms. Vinpocetine-5-10 mg 3x/day for cognitive impairment due to vascular disease, Alzheimer's disease, and other kinds of dementias. May have a modest effect on cognitive impairment from various causes VITAMIN D3- Optimal level in the range (25-OH-vitamin D blood level) Recent study: During person-years, 171 developed dementia, 102 Alzheimer s If deficient in vitamin D-- 51% increased risk for all-cause dementia (1.5 risk) Severely deficient-- 122% increased risk (HR = 2.22) Adjusted for other factors (education, sex, body mass index, smoking, alcohol consumption, and depressive symptoms). 5 5 Lifestyle Education And Food A great big to all the volunteers that have helped with the assembly of notebooks, food preparation, etc. for our current LEAF classes. All of your hard work is appreciated and makes this class possible. A special thank you to Kristen Fox and Alexandria Walls for volunteering their time to help with notebook assembly. 6 6 Wabash Valley LEAF/CHIP Chats October, 2014 How many of you made it to the Covered Bridge Festival? To keep a promise made to my granddaughter, I made the trip to Mansfield Saturday. It only took 40 minutes to get out of Brazil! I was disappointed in the healthy food choices that were available. In other words, we didn t find any. The smells were amazing, but smells don t satisfy the hunger pangs. The best option was the ham and beans but by the time you fished out the ham there wasn t much left. It was cold and thank goodness for cheap gloves at a vendor right inside the entrance. At least I kept my promise to go. It does seem like fall has arrived, let s hope it doesn t lead into an early winter. Not sure where all of these leaves came from but overnight it seems like the leaf fairy must have descended on our yard with someone else s leaves. We don t have any trees with leaves like some that are in the yard. It s a mystery! It is hard to believe, but this LEAF class is already half over. It has been challenging but also rewarding. It s amazing what good teamwork can overcome. We have all learned a lot about strategy and planning ahead in the last few weeks. I think we have a handle on it now. I don t think any of the leadership team ever dreamed that we would see the number of people in a class like we have this time. But as always, the new class members have been under-standing, patient and very kind to us while we are in the learning process. Overall, their comments have been positive. The lack of personal space is the biggest issue but they have been understanding about that also. They are a great group of people to work with and we certainly hope to see them actively involved in the alumni group in the near future. Believe it or not, the dates for LEAF 4 have been set and we already have almost 20 people who have called the Maple Center and asked to have their names put on a waiting list for the class. I am pretty sure that Karen has reserved the Hayes Auditorium again for the next class and has also made reservations for using the Rooney Library again for the health screenings. Two things down and a few more to go! We learned a lot from the planning on LEAF 3 so it will make the process a lot smoother going forward. Hopefully, there won t be any more last minute changes, or reverting to Plan B (or C). Look for more information to come out after the first of the year. Classes will start in March! There will also be separate four week cancer and diabetes classes offered again after the first of the year. I believe the cancer class will be in January and the diabetes will begin in February. If you know anyone who has, or has been affected by either of these two diseases, please encourage them to contact the Maple Center for further information. The feedback from the last two classes has been very positive and the participants have gotten a lot of good information from them. The LEAF and the CHIP classes touched on both topics, but these sessions are specific and concentrated on the disease itself. As we have all learned, the food choices we make have a profound effect on our bodies. These two stand-alone classes also explain the connection in further detail and offer more alternatives.

7 7 Wabash Valley LEAF/CHIP Chats Continued Since the weather is getting a bit cooler, it seems like a soup recipe would be a good idea this month. Here is one of our favorites. It even passed the 15 year old semi-vegan taste test! Taco Soup 1 ½ cups soy curls 1 onion chopped 1 packet taco seasoning* 2 Tbsp. chick n style seasoning ½ tsp. onion powder 1 tsp. chili powder 16 oz. can of diced tomatoes 16 oz. can pinto beans, drained 8 oz. can tomato sauce 1 cup water ½ cup sliced olives Soak soy curls in warm water for 10 minutes. Drain the soy curls and sauté with onions and seasonings in a kettle. Add all of the other ingredients. Simmer for minutes. *you can find reduced sodium taco seasoning. Hard to believe that next month is turkey time. Do you have a recipe you would like to share for a new or old favorite at your house? If the client can designate massage time to relax it is more beneficial. 2 Remove all jewelry, watches, and stretch bracelets if possible and agreeable. 3 If leaving pants on, remove belt and wallet and empty pockets. 4 Be clean as possible. If provided, the client may use hand sanitizer and wash cloth to tidy up or stop in restroom ahead of schedule. Black sandals may rub off making the bottom of feet black and if shoes smell, the feet probably do as well. 5 After a client is settled in, it is ok to be silent and allow the body to receive the work on an uninterrupted energetic level. However, it is certainly ok to talk during the session. 6 Be clear about areas of discomfort to focus on or areas to leave untouched. It is the client s massage and responsibility to speak up if the pressure is too intense, not enough, or experiencing tender regions. Ask if there are questions. Let the therapist know if the temperature of the table warmer or room needs to be adjusted. Be comfortable. 7 Dress and exit promptly to help therapist stay on schedule. Wait until out of massage room to check messages, return phone calls, reapply makeup, etc. 8 If provided, client may use hand sanitizer and/or washcloth to remove excess lotion after massage if desired. 9 Critical: Drink several glasses of water during the rest of the day. December 10, 2014 Eve Lasswell, 3rd year PsyD student at Indiana State University Presents: Mindfulness in Daily Living This presentation will include an of overview of what mindfulness entails, approaches to developing mindfulness in daily living, as well as the mental and physical benefits of practicing mindfulness.

10 10 This Breast Cancer Awareness Month Women across the country should swap their pink ribbons for orange vegetables this Breast Cancer Awareness Month if they really want to improve their odds of fighting the disease that kills tens of thousands of women each year. The latest research shows that women who consume the most carotenoid-rich fruits and vegetables reduce their risk for breast cancer by about 19 percent, according to Susan Levin, M.S., R.D., director of nutrition education for the Physicians Committee and author of Applying the Precautionary Principle to Nutrition and Cancer guidelines, which was published in the Journal of American College of Nutrition. Carotenoids are colorful pigments found in plants that provide an ample supply of cancer-fighting antioxidants. The Institute of Medicine encourages women to consume 3 to 6 milligrams of betacarotene a carotenoid in dark green, orange, and red vegetables each day to reduce the risk of breast cancer. One medium sweet potato contains two to three times the recommended dietary intake of beta-carotene, which will help reduce the risk for cancer and boost the immune system. Other good sources of beta-carotene include:

Women should limit or avoid alcohol, dairy products, and red and processed meat products. Applying the Precautionary Principle to Nutrition and Cancer By Susan Levin, M.S., R.D., C.S.S.D. Research continues to show, time and time again, that plant-based foods reduce the risk of cancer and strengthen the chance of survival after diagnosis. While more research is needed in this area, we now have a set of six precautionary principles to reduce the risk of occurrence: 1) Avoid dairy products to reduce risk of prostate cancer. 2) Limit or avoid alcohol to reduce the risk of cancers of the mouth, pharynx, larynx, esophagus, colon, rectum, and breast. 3) Avoid red and processed meat to reduce the risk of cancers of the colon and rectum. 4) Avoid grilled, fried, and broiled meats to reduce the risk of cancers of the colon, rectum, breast, prostate, kidney, and pancreas. 5) Women should consume soy products in adolescence to reduce risk of breast cancer. Breast cancer survivors should consume soy products to reduce risk of cancer recurrence and overall mortality. 6) Eat a diet rich in fruits and vegetables to reduce risk of several forms of cancer. Diets that center around plant sources vegetables, fruits, whole grains, and legumes are associated with lower cancer risk, as well as reduced risk for cardiovascular disease, diabetes, and hypertension. Plant-based diets support a healthy weight, which in itself reduces the risk of many common forms of cancer. Especially good plant sources include cruciferous vegetables, such as broccoli, kale, and cabbage; carotenoid vegetables, including carrots and sweet potatoes; tomato products; and allium vegetables, such as onions, garlic, and leeks.

12 12 INGREDIENTS: Pie 12 oz firm silken tofu 2 Cups pumpkin purée ½ Cup maple syrup ½ Cup light brown sugar ¼ Cup arrowroot powder 1 ½ tsp cinnamon ½ tsp salt ¼ tsp grated nutmeg ¼ tsp ground ginger 1/8 tsp ground cloves Oat Crust ¾ Cup pecans 3 Tbsp melted coconut oil 4 Tbsp maple syrup ½ Cup + 1/3 Cup oat flour 1 Cup oats Whipped Cream One 12-ounce package extra firm silken tofu, drained ½ cup cashews, soaked overnight and drained ½ cup 100% pure maple syrup 2 tablespoons fresh lemon juice Pinch salt 2 tsp pure vanilla extract INSTRUCTIONS Pie In food processor, blend together all ingredients until smooth and creamy. Scrape down the side of the bowl as needed. Pour the filling into the baked crust (recipe below). Bake for minutes or until the crust is lightly brown and the outermost inch of the filling is set. Don t worry is the center is still soft. It continues to firm up as the pie cools. Serve chilled or at room temperature with a dollop of whipped cream (recipe below). Oat Crust Preheat oven to 325 Deg. F. Blend ingredients in food processor. Spread mixture onto the bottom of pie plate. Bake at 350 for 8 to 10 minutes just until beginning to brown. Whipped Cream Combine the tofu, cashews, maple syrup, lemon juice, and salt in a blender. Purée until smooth. Scrape down the sides of the blender to incorporate all the ingredients. Transfer the mixture to a bowl and cover with plastic wrap. Chill for several hours in the refrigerator, or until firm.
