Lets face it, consumers judge their food by its cover. Optimum performance. Consumers demand meat packers and processors to produce safe, wholesome meat products. The CDC estimates that each year approximately 1 in 6 Americans (48 million people) will contract foodborne illness. Over one half of the processed meats category uses some form of sodium or potassium lactate and diacetate blends in their formulations to help keep meat products safe. We know consumers don t want to have to think about what is in their food unless there is a reason due to health concerns, lack of trust due to recent recalls or media attention around a specific food or ingredient. Consumers expect their food to stay fresh longer. Convenience and shelf life rank as the top 2 factors for consumers as benefits when it comes to purchasing processed foods including meats. When purchasing meat, appearance is the key factor consumers evaluate considerably ahead of price and other qualities. Optimum safety. Meat, poultry and fish products are highly susceptible to microbiological contamination, including food-borne pathogens. The use of Opti.Form results in improved food safety by inhibiting the growth of Listeria monocotogenes and other pathogens. Listeria monocytogenes is a major concern for food regulators and meat processors because it is able to grow at refrigerated temperatures and in products with low water activity. The recent USDA Risk Assessment on LM in retail deli sliced meat items indicated a 96% reduction in the potential for listeriosis if antimicrobial inhibitors are used in RTE meat products sliced at deli. Proper use of antimicrobial can keep growth to a minimum and protect the health of consumers. Hundreds of studies have been performed to determine the effectiveness of Opti.Form against Listeria. Figure 1 shows how 3% Opti.Form PD4 effectively inhibits Listeria growth throughout shelf life at 39 and 44 F in sliced ham. Figure 2 shows effectiveness of Opti.Form PD4 to control Listeria in cured frankfurter throughout shelf life. Optimum shelf life. Shelf life means different things to different people. However, to those in the food industry it is defined as the period in which a product remains safe and suitable for consumption. There are many factors that can affect shelf life of meat and poultry products from appearance (color), tenderness and juiciness to fat and protein content, drip and cooking loss and the presence of off odors. However, It can also be used to improve moisture control (cook yield and purge over time), reduce ropy slime, as well as have a positive impact on texture and sliceability. Figure 4 shows how increasing concentrations of Opti.Form PD4 reduces purge and improves cook yield from 3-6%. Opti.Form PD4 can compensate for yield loss due to increased ionic strength in low salt products. The image in Figure 5 further demonstrates the effect on cook yield using 3.5% Opti.Form PD4 or 3.5% Opti.Form PD4 Ultra. Further testing demonstrates improvements on texture of cooked ham using Opti.Form PD4 shown in Figure 6.
