The saturated fatty acids are made up of 44% palmitic acid and 5% stearic acid. The unsaturated fatty acids consist of 40% monounsaturated oleic acid. Necessary Nutrition for Human Health Fatty Acid Chemical Structure --- Fats are a group of chemical compounds that contain fatty acids. Most naturally occurring fatty acids have a chain of an even number of carbon atoms with CH3 at one end and a carboxyl group (COOH) attached to the other end. The physical & chemical property and biological effects mostly depend on the saturability of fatty acids. Types of fatty acids: Saturated Fatty Acids are long-chain carboxylic acids that usually have no double bonds. Thus, they are saturated with hydrogen. Necessary Nutrition for Human Health Free radicals is a kind of unstable chemical component when oxygenation occur. -- Free radicals has quick reaction When free radicals attack human cell, they oxidize the fatty acid components on the cell membrane in a process called lipid peroxidation and gradually damage the DNA. The abnormal growth of cells will lead to tumour and cancer. -- Antioxidants, such as Vitamin E tocopherols, can help protect the cell by occupying themselves to the free radicals, thus, minimizing the extent of lipid peroxidation. As a result, they keep the cell membrane stable and healthy.
