Report on how the calories and grams of CHO compare to the exchange diet. calories calculated on ESHA for the 00 AA diet was kcal (<00 kcal). There were some discrepancies in grams of CHO compared to the diabetic exchange list. For instance, at breakfast the exchange list calculated total grams of CHO as g, whereas on ESHA grams of CHO were 49 g. More specifically, exchanges of starch are equal to 0 g CHO, but on ESHA pancakes, 4 across, was only g CHO. However, cup of raspberries was g CHO for both the diabetic exchange list and ESHA. The Exchange ist for iabetes allows people to compare carbohydrate, protein, and fat in food items and eat about the same amount of carbohydrate at about the same time each day. However, those who take multiple daily injections of insulin to control blood glucose levels have more freedom to choose their foods and mealtimes. iscrepancies between the exchange list and ESHA can be contributed to the different brands and serving sizes used.

PART THREE Following the 00 kcal AA diet was more stressful than I originally thought it would be. I don t typically worry too much about counting carbohydrates, fats, or proteins. My belief is that if I eat a wide variety of foods, healthy portion sizes, at consistent times of the day, I will meet recommended requirements for calories and nutrients. I also try to eat only when I m hungry and as well as eat slower during meals. Of course, it is still difficult to follow this at times. I can imagine the frustration felt by diabetics who need to control their blood glucose levels or else health concerns arise. One woman I visited with while performing an annual assessment for Meals on Wheels explained that she was allergic to most medications, including insulin. It is difficult for her to control arthritic pain and manage her type II diabetes. She requires assistance from her son to help prepare meals. It is important for her to be very careful with what food she eats, in order to control blood glucose levels. In recent years, she has lost a significant amount of weight with the restrictions she has had to place on her diet. Although this is an extreme case, it demonstrates the difficulty diabetics have in preparing controlled carbohydrate meals that satisfy the appetite. It s easy to understand why diabetics are often non-compliant in following controlled diets.
