2 NUTRITIONAL POLICY What you need to know about the nutritional policy at KTB Kids

3 Our promise to parents Our menus are based around food that is freshly prepared on site from predominantly unprocessed ingredients. Our food is free from controversial additives, trans-fats and genetically modified ingredients. We only serve food that meets or exceeds or UK Welfare standards. We incorporate organic ingredients into our menus. We champion local produce and local producers. Our emphasis is on serving an appetising and nutritious balance of good quality, freshly prepared foods.

4 Our Standards at KTB Kids - At KTB Kids we have achieved the highest award from the soil association food for life award. This means we are able to show evidence that we exceed the highest Catering Mark Standards which are: We serving ethical and environmentally sustainable food, championing local food producers and making healthy eating easy. We serve fresh food you can trust. Over 15% of our spend is on Organic ingredients.

5 Our nursery housekeeper This role of the nursery housekeeper at KTB Kids involves the preparation and cooking of the nursery meals on site using locally sourced produce and worldwide inspired menus. Mrs Murphy also leads specialist sessions with our children including baking and growing to enable the children to understand how simple produce can be created into edible delights.

6 Cooking from scratch Each week at KTB Kids: We make a homemade tomato sauce which we use as a base for bolognaise, pasta or a puree. We make a homemade vegetable stock which we use as a base for our gravy, soups and purees. We make a homemade fruit smoothie which uses at least 1 fresh fruit. We make 2 puddings from scratch that are fruit based, these may be cooked puddings e.g. homemade seasonal fruit pie or crumble or a cold pudding such as fresh fruit salad which we can serve with ice cream. We make one milk based pudding from scratch such as rice pudding or semolina. We make a homemade soup to serve for high tea for at least one day per week. We bake our bread from scratch on at least 2 days per week.

7 The eggs at KTB Kids At KTB Kids we aim to only bake or cook with Organic eggs. Why? Organic eggs offer the highest standards of animal welfare and nutritional value.

8 The Fish at KTB Kids At KTB Kids we serve fish for our main meal on one day each week. We never serve fish that are on the Marine Conservation Society fish to avoid list. All the fish we serve is fish certified sustainable by the Marine Stewardship Council.

9 Promoting organic poultry At KTB Kids we aim to serve exclusively organic poultry. Why? Organic chicken and turkeys have access to the outdoors with a more stimulating environment and are given more space in their shed which houses significantly fewer numbers of animals.

10 Promoting free range pork At KTB Kids we aim to serve exclusively free range pork. Why? An estimated 60% of breeding sows and 93% of pigs reared for meat in the UK spend most or all of their life indoors, many on concrete. At KTB Kids we use suppliers that promote pork from pigs that are born outside and spend their entire lives outdoors in the fresh air, with freedom to roam in large paddocks.

11 Pork and Lamb at KTB Kids All pork and lamb products on our menu are accredited by a national standard. Why? Farm assured meat is produced on farms that are inspected on an annual basis by accredited inspectors. This means that we can claim with confidence that UK minimum standards on animal welfare are being met and can be traced back to the farm.

12 Promoting Organic Dairy Products At KTB Kids we only provide organic milk and where possible organic for all dairy products. Why? Research has shown that organic milk provides increased nutritional benefits. Specifically it has higher levels of an Omega-3 essential fatty acid (ALA, alpha-linolenic acid), vitamin E, vitamin A and antioxidants.

13 Promoting Fairtrade & Ethical Trade At KTB Kids where possible we promote the use of Fairtrade products including our bananas and pineapples. Why? Fairtrade standards, as guaranteed by the Fairtrade Mark, ensure that disadvantaged producers in the developing world are getting a better deal.

14 Seasonal menus at KTB Kids Our menus make use of in-season fruit and vegetables and where possible meats and fish too. Why? Eating UK produce in season is one of the best ways to reduce our carbon footprint, by cutting out food miles and avoiding energy-intensive heated glasshouses. Eating in-season means that our children are eating food at its best.

15 Menu planning At KTB Kids we ensure that the food and drink provided for children is balanced across each day and that children eat regularly.

16 6 steps for planning healthy meals 1. All our meals and snacks are planned in advance to ensure they are balanced and include variety. 2. Our menus change each week taking into account the season, festivals, special days and feedback. 3. Each meal and snack is planned to meet the food and drink guidelines; eat better, start better. 4. Menus are planned to include a variety of foods, tastes, textures and colours. 5. Menus cater for the cultural and dietary needs of all the children in our care. 6. Our menus are displayed within our nursery and on our parents notice board so they are shared with parents.

17 Recommended servings of key food groups For children attending KTB Kids from 08:00 18:00 we provide:

18 4 portions of starchy foods per day One portion as part of each meal For example: Cereals or wholemeal bread at breakfast Potato, rice, pasta or starchy root vegetables at lunch Wholemeal bread for high tea Savoury crackers for evening snack

19 7 portions of fruit & vegetables daily Dried fruit with breakfast. A selection of fruit at mid-morning snack. A selection of fresh seasonal vegetables at lunch. Homemade fruit smoothie at high tea. Vegetable sticks and tomatoes with evening snack.

20 A minimum of three portions of milk or dairy products per day: This includes but is not limited to: Milk with cereal at breakfast time. Fresh milk served as a drink at morning snack and evening snack. Milk based pudding or yogurt at lunch. Fresh milk based fruit smoothie served at high tea. Cheese served with evening snack.

21 Meat free days At KTB Kids we serve all children two meat free dinners per week. Why? For climate change, health and animal welfare reasons, we believe that it is desirable that we shift towards eating less but better quality meat. On meat free days meat is replaced with more fruit and vegetables and starchy wholefoods.

22 Our vegetarian alternative Each day when meat or fish is served our menu will offer a suitable vegetarian alternative. This is typically quorn, tofu, another meat alternative, or vegetables. We do not use fish or cheese as an alternative to meat.

23 Reducing Salt at KTB Kids To actively reduce salt from our menus we: 1. Ensure that over 85% of our meals are homemade on the premises thereby avoiding ready-made, tinned or packet soups, sauces and processed foods. 2. Never routinely add salt when cooking rice, vegetables, potatoes and pulses. 3. Use home-made stocks, spices and herbs to enhance the flavour of food. 4. Only offer low salt or unsalted savoury snacks. 5. Never add to a meal once cooked.

24 Providing food for all All practitioners at KTB Kids are aware of children s individual dietary requirements. Children s choices, beliefs and safety are always respected and protected. Children s unique requirements are clearly displayed in the nursery kitchen and in the dining area. Children have an individual placemat at their dining room space indicating food requirements.

25 Encouraging fussy eaters At KTB Kids we appreciate traditional family values and great importance is placed upon our communal mealtimes throughout the day. At these times the children come together and with our staff experience a positive, social time where quality homemade food is served and children are encouraged to make healthy choices. In addition to this several measures are taken to ensure children are positively encouraged to eat well.

26 Modelling to encourage positive eating Children always eat together around the communal dining table so we can encourage good eaters to act as positive role models for less confident eaters. Practitioners speak enthusiastically about the meals, ingredients and food in general throughout mealtimes. Children are always praised for trying something new.

27 Variation of food to encourage new tastes Our menus are varied and reflect food from around the world with many different tastes and textures. Children are given regular and repeated chances to taste new foods.

28 Controlling portion size Children serve themselves and each other so plates are not overfilled and children come back for seconds and thirds. This method of serving at the table also reduces plate waste.

29 Nursery practitioner training At KTB Kids all nursery practitioners, supports and apprenticeships must complete their level II food hygiene certificate within three months of working at our nursery. This helps to ensure that all our practitioners supporting the children at mealtimes and assisting our housekeeper in preparing snacks have a formal basic awareness of good hygiene and safety issues whilst meeting food industry regulations.

30 Ofsted quotes about our mealtimes Children are encouraged to eat a wide range of nutritious, balanced meals and snacks. The setting has an excellent approach to catering for religious preferences, allergies and food intolerances.

31 Continued Staff sit with children during snack and meal times and this provides opportunities for conversation and for staff to help children to use different cutlery safely and confidently. Children's growing independence skills are encouraged very well during snack and meal times. For example, older children are encouraged to serve themselves their fruit or lunch and pour their own drinks.

32 Your feedback We pride ourselves on the quality of the food that we provide for the children in our care. As part of our continuing improvement plan we are continuously looking for feedback to improve our menus further. Each day the nursery team and our nursery housekeeper will take note of how well the food served is received by our children. We will change the recipes if required, or omit dishes from the menu if necessary. We also value feedback from parents, if you would like to talk about our menus then we would encourage you to speak to us at your convenience by phone, or face to face.
