1 H.A.N.D. H N D Health and Nutrition for the Deaf
2 Vision Deaf people will learn how to lead healthy lifestyles.
3 Mission HAND will provide Deaf people with information that will enable the individuals to make informed decisions regarding healthy diet and exercise.
4 Goals After three years, at two 16-week semesters per year, 18 Deaf people will develop the knowledge to understand food intake models, know how to read nutrition labels and ingredient lists, and develop the physical ability to perform various exercises. This ability will be determined by the results of pre-testing and post-testing in the areas of knowledge of food intake models, food label knowledge, and performance on fitness tests.
5 Core Services 1. Classroom instruction, in ASL, with topics related to healthy diet and exercise habits. 2. Development of visual aids to make food labels and healthy eating more understandable to Deaf people. 3. Development of visual aids to make exercise techniques more understandable to Deaf people.
6 Core Services Descriptions HAND aims to teach Deaf people the importance of healthy eating habits and the importance of exercise by offering instruction related to various aspects of healthy living. HAND will use classroom instruction to teach Deaf people how to use various models for daily food intake, how to read nutritional labels, and how to read ingredient lists. These classes will provide information regarding which ingredients are beneficial or safe to consume, and which ingredients to avoid. HAND will use demonstrations and visual models to teach Deaf people how exercise contributes to a healthy lifestyle, as well as how to properly and safely perform various stretching, cardiovascular, and strength exercises. Within these topics, the importance of building endurance will also be discussed.
7 Obesity Statistics United States Source: Percent of adults are obese. Approximately 17% (12.5 million) children and adolescents ages 2 to 19 years are obese. Since 1980, the number of obese children and adolescents nearly tripled

9 Obesity Statistics and Deafness (University of Rochester Medical Center) Deaf adults are more likely to be obese than hearing adults. 34% of the Deaf population is obese, compared to 26% of the hearing population. Significant fact: Deaf people are often excluded from health research.

11 Who will be providing this information? We have registered dietitians who are fluent in American Sign Language who will be presenting these topics. We also have certified personal trainers who are fluent in American Sign Language. These individuals will use ASL to provide to Deaf people important information regarding how to exercise safely and effectively.
12 Pre-test Health screening to determine blood pressure and body mass index (BMI) of the participants in the program. Knowledge test (written or ASL) to determine the participants levels of knowledge regarding food groups, food intake models, nutritional labels, ingredient lists, and exercise. The final part of the pre-test will include an evaluation of the participants abilities related to endurance, speed, flexibility, and strength, using exercises designed for beginners. Included exercises One-mile walk Toe-touching stretches 20 repetitions of various weight-lifting exercises
13 Our Program: Food Consumption: Part 1 Following the pre-test, instruction uses a combination of ASL and visual models to teach Deaf people the basics about healthy eating habits. According to our needs assessment survey, Deaf people prefer to learn about a healthy diet using a model that shows how much food from each group should be consumed at each meal.

16 Our Program: Food Consumption: Part 2 Nutritional Labels The second part of the program uses a combination of ASL and other visual aids to teach Deaf people about nutrients, how much of each nutrient should be consumed on a daily basis, sources of various nutrients, and how to read food labels, including the top portion (Calories, fat, carbohydrates, protein, etc) and bottom portion (vitamins and minerals) of food labels.
17 Our Program Part 2: Nutritional Labels What does all of this mean?
18 Our Program Part 3 : Ingredient Lists The third portion of the program will use ASL to teaching Deaf people how to read ingredient lists. This portion will describe what various ingredients are, and what ingredients are beneficial, neutral, or harmful to the body.
19 What does all of this mean?
20 HAND Special One-Day Seminars in American Sign Language Eat This, Not That (on a budget) You Can Still Eat Healthy at a Low Cost This not That This not That Do you want to eat healthy? Do you think that eating healthy is expensive? Do you think that you can t cook? Come to our special one-day cooking demonstrations. You will learn about herbs and spices that can be used to enhance the flavors of several dishes. We will demonstrate how to prepare healthy, hearty, and delicious dishes that are simple and inexpensive to prepare. (Different dishes will be prepared each time the seminar is offered.)
21 Results Upon completing the nutrition portion of the program, we would like to see the following. 90% of participants with a greater understanding of the food groups and the importance of a diet consisting of a variety of foods. 90% of participants with a greater understanding of nutritional labels. 55% of participants with a greater understanding of ingredient lists. This will be determined by the results of a post-test similar to the pre-instruction assessment.
22 Our Program: Exercise This portion of the program will use a combination of ASL and visual aids/demonstrations to show Deaf people how to exercise effectively and safely.
23 Topics include: How to properly warm-up for exercise Cardiovascular exercise What it is and why it is important Types of cardiovascular exercise Importance of endurance in cardiovascular exercise The importance of stretching to increase flexibility and prevent exercise-related injury Strength training
24 Our Program: Exercise Our program will use ASL, visual aids and demonstrations, when possible, to show the right ways and wrong ways to perform exercises. This will reduce the risk of injury to Deaf people who wish to achieve better health by making sure that they have as much information as possible about proper exercise techniques.
25 Fitness Post-test Participants will perform the tests from the pretests in both knowledge and performance. These will gauge the participants increases in knowledge, flexibility, endurance, speed, and strength. Participants will also receive the health screening a second time upon completion of the program.
26 Fitness Program Results At the conclusion of the fitness portion of the program, 90% of participants will increase their endurance and flexibility. 90% of participants will decrease their times for the one mile walk. 80% of participants will be stronger than before starting the program. 75% of participants will be able to walk 1 ½ miles consecutively, maintaining an aerobic pace for the entire distance. 75% of participants with high blood pressure will experience drops in blood pressure 50% of participants with high body mass index will experience drops in BMI within 16 weeks.
