Recently, consumer attention has turned to palm oil and its adverse effects on the environment, demanding that it be removed from products despite the fact that palm oil is far more sustainable in yield and functionality when produced in accordance with RSPO (Roundtable of Sustainable Palm Oil) principles. Removing palm oil from the recipes of industrially produced cakes is easily managed. Finding an efficient, palm-free emulsifier that will allow you to continue producing delicious and moist cakes is, however, not or hasn't been until the launch of Palsgaard SA 6615, the world's first palmfree emulsifier in powder form for industrial cakes that's produced in a CO 2 -neutral factory. 3 Put our expertise to work for you A legacy of expertise Creating an efficient, palm-free emulsifier is not as easy as it sounds as other vegetable oils have different compositions that may result in less efficient emulsifiers. And, if you want to make it in powder form, it becomes even more difficult. As the inventor of the modern food emulsifier over a century ago, Palsgaard has unique insights into what it takes to develop the perfect powdered, palm-free emulsifier. Using our patented extrusion technique, we have developed Palsgaard SA 6615, the newest member of our renowned Palsgaard SA series of activated industrial cake emulsifiers, offering numerous benefits such as: A shelf-life that far surpasses that of cake gels Fast aeration of the cake batter Lean label Convenience in use Stability during the baking/cooling process high tolerance to mechanical treatment What is an activated cake emulsifier? "Activated cake emulsifier" is a term used to describe the instant properties of the emulsifier when added to the cake batter. The activation is achieved by placing the emulsifier on the surface of very small starch granules by means of a highly sophisticated extrusion process. The result is significant: One 15 kg carton has a surface area equal to 4 or 5 football fields. The effect is instant functionality, fast uptake and incorporation of air into the cake batter, leading to improved stability and superior cake quality. 4 From dry powders to moist treats Optimal production and cost efficiency As a powdered ingredient, Palsgaard SA 6615 offers several benefits compared with gels, shortenings or other emulsifiers in paste form, making production so much easier and safer. The emulsifier requires no prehydration or preparatory steps and can be added directly to the batter in a fully automated process, leading to simplified production with a minimum of manual handling and maximum security for correct dosages and performance as well as added savings from eliminating emulsifier and cake product waste. As the fastest aerating industrial cake emulsifier on the market, Palsgaard SA 6615 will also help manufacturers save both time and energy as it requires only a few minutes of preparation before being ready for use. Equally, the mixing process can be significantly reduced from the traditional 4-6 steps down to just two, allowing for a less energy-intensive production process. Lower dosage, higher quality Palsgaard SA 6615 has a higher emulsifier content than gels, and uses rice flour as an activating medium. The high amount of emulsifier allows for lower dosages than gels, leading to solutions with attractive cost-in-use calculations. The stable performance of Palsgaard SA 6615 leads to more consistent cake quality, as the emulsifier offers the same functional effect from batch to batch. 5 Stable storage The alpha crystal form in Palsgaard SA 6615 is stable for at least 18 months contrary to many gels which may recrystallise quickly during storage, creating white spots. Such spots are not whipping-active and will spread throughout the gel, destroying whippability over time. Powerful simplicity Palsgaard SA 6615 also enables safer, less costly and faster product development. That s because it consists of only one active emulsifier and one food ingredient, so cake manufacturers no longer have to consider multiple ingredients and their often contradictory or undesirable effects. This cost-effective formulation makes it easier to adjust recipes when developing new products or making adjustments to existing ones no matter if the products made are aerated or non-aerated cakes, as Palsgaard SA 6615 works perfectly in different cake types such as sponge cakes, Swiss rolls, cup cakes, muffins and other cakes. Contrary to many other emulsifiers Palsgaard SA 6615 does not contain any sugar, meaning it is possible to develop completely sugar-free recipes. 5

6 Additional benefits Leaner labels Cakes with fewer additives are increasingly finding favour. With only one food carrier and one emulsifier (polyglycerol esters or E475) to declare on the label, Palsgaard SA 6615 shortens the list of additives compared with other cake emulsifier solutions. Healthier cakes at lower costs Cakes with a low content of saturated fats are in high demand, as are soft and moist cakes. Using Palsgaard SA 6615 will allow you to meet both demands. As the emulsifier holds high amounts of liquid, unsaturated vegetable oils, it is possible to move away from less healthier and often more costly fat sources, yet produce cakes with increased moistness and softness throughout their shelf-life. GMO-free With mounting consumer resistance towards products containing GMO ingredients, many producers are eager to manufacture non-gmo products. Palsgaard SA 6615 consists solely of ingredients with non-gmo status, giving cake manufacturers less to worry about as the pressure against GMO ingredients continues to rise. Overcoming shortening drawbacks Several benefits can be achieved by using Palsgaard SA 6615 instead of shortenings. Being in powder form, Palsgaard SA 6615 offers advantages in handling, processing and even costs depending on the recipe, processing conditions and ingredient costs. As emulsifier and fat content is not linked when using Palsgaard SA 6615, making separate adjustments becomes an easy task, targeting both a lower and possibly healthier fat content and a higher aeration simultaneously.
