3 State of the Art: ATTICA study - adherence to the Mediterranean Diet is associated with total antioxidant capacity in healthy adults TAC was positively correlated with the intake of fruit, vegetables, olive oils Source: Pitsavos et al., 2005 Am J Clin Nutr

4 Mediterranean Diet as a Sustainable Diet Mediterranean Diet appears as a valid model of sustainability from the health, environment and economic point of view, helping to support quality in food and in the meantime helping to promote sustainable resource management through environmental sound farming systems linked to territorial characterisation and to local cultural heritage.

5 Mediterranean Score Mediterranean Score (MS): A dietary score that assessed adherence to a Mediterranean-style relying on plant foods and unsaturated lipids. 8 scores corresponding to 8 key food items defining Mediterranean diet (e.g. monounsaturated and saturated fats ratio). 0-3=no Mediterranean-Style 4-8=Mediterranean- Style (de Groot et al., 1996) Since 60s Italian diet was less and less Mediterranean with MS progressively lowering (from 5 to 3). Increase of saturated fats and animal protein source (meat and milk) are the responsible of this findings Source: Rossi et al., 2002

9 Specific Aims: BIOVITA Project : tools for describing the Italian agro-alimentary system -Identification and valorization of Italian local, traditional and certified products with protected designation of origin (vegetable and animal products). -Identification and characterisation of markers and parameters in order to describe nutritional, organoleptic and sensorial quality. -Evaluation of nutritional and organoleptic properties of horticultural products derived from different cultivation systems and along the whole food chain. -Identification of feeding strategies in dairy cattle for the production of functional foods (milk and milk derived products). -Development of technologies for the conservation and enhancement of milk and dairy products.
