1 WEEKEND WORKSHOPS CURRICULUM Raw Tuition: THB 7,950 net Classic Matthew Kenney Recipes for Beginners Discover the amazing health benefits of eating raw! This one day intensive provides an introduction to raw cuisine and the different techniques and principles behind raw food preparation. Students learn a variety of cutting-edge recipes, develop a deeper understanding of basics of raw cuisine and are equipped to prepare delicious and nutritious raw meals at home. Students have hands on experience making kimchi and creating fermented cheese. Participants are taught to use fermented foods in a variety of Matthew Kenney recipes, and will create simple pickled vegetables, the perfect accompaniment to fermented tree nut cheeses. This workshop explores the various applications of raw cacao, its health benefits and rich history. Students learn the techniques and skills involved in tempering chocolate and cover the various ways chocolate can be handled, and the benefits of each technique. Students craft raw, plant-based alternatives to traditional filled chocolates, pastries, sauces, fudge and treats. Preparing artisan chocolate is liberating for a chef in a number of ways. There are fewer ingredients required, therefore, the creative inspiration becomes all about technique, redefining taste and texture, and searching for new ways to present a classic. Different flavor profiles are explored as students work with a variety of recipes. Students learn the art of cheese board presentation and suitable pairings as a unique part of this innovative course. 4 Bread Program duration: 2 days/ 5 hours per day Tuition: THB15,000 net A clean take on creating your own gluten free alternatives Bread is a two-day introductory course designed to teach students to create gluten free, nutrient dense raw foods. Students learn how to navigate the gluten free aisle, gluten free grains and how best to stock a gluten free pantry. The course covers different techniques in making raw breads and its uses in i plant based cuisine. Participants will learn how to use various nut flours to prepare sweets and cookies as well as alternative sweeteners and dehydration techniques. 5 Q&A Q : How or where do I find the schedule of the courses? A : The course schedule is available on a quarterly basis. Please refer to the attached schedule or our website The intensive courses are available on weekends only. Saturday classes are from 1 pm to 6 pm and Sunday classes are from 10 am to 3 pm. Q : What is the maximum capacity of each class? A : A maximum of 16 persons per class. Q : Do I need to have any formal cooking qualifications to attend the class? A : Our intensive courses are designed for those who are interested in raw food and would like to learn more about it. An interest in cooking although not essential would be a bonus as there will be reference to cooking terminology. Q : What do I need to prepare? A : The academy provides a set of knives and kitchen apron to be loaned in the class. Each student will have their own working station to allow for a Hands-on learning experience including access to specialty equipment in the academy. Q : What do I need to wear? A : Long pants or trousers, comfortable flat shoes with closed toe and slip resistant are recommended for safety reasons. Q : What language medium is used in the class? A : English. Q : Do I need to stay overnight at Evason Hua Hin? A : It s not mandatory to stay at Evason Hua Hin. However enrollment with resort accommodation will be guaranteed early check-in at 12 noon on Saturday and late check out at 6 pm on Sunday. Q : What time should I arrive at the academy? A : You should arrive and be present at the academy at least 20 minutes before the class starts. Q : Could I enroll in more than one class? A : You can enroll in multiple available classes. Discounts are available for multiple class enrollments. Q : May I take my child to join the class? A : No intensive courses are designed for persons from the age of 16 and above.
