I will connect North American students to Nicaraguan students Teach a course for professors Chronic Disease and Obesity: Assist with curriculum development, Work with the University s new health clinic Potential Volunteer Projects: Work on the preparation phase (mostly in Jan/Feb/ March -lectures/powerpoints/activities Teacher s assistant attend classes, work w/ students on research projects (collecting information on diet in their neighborhoods) Work with student health clinic help train health promoters, participate in health promotion Presentations for me for workshops, conferences Research specific to a book I am writing
9 Volunteer Expectations/Requirements hours, 3 days/week. This leaves enough time to either work part-time (you can teach English in Managua and make enough money to pay for your trip and all expenses) or to enjoy long weekends exploring the country or time to study Spanish intensively or learn how to salsa dance or surf. Spanish fluency not required Adherence to safety protocols Hospitals
10 Hospitals II Rancid Oils Ecology & Health II/Solar Ovens Oil is very expensive, so families reuse cooking oil dozens of times Reusing cooking oils has been strongly linked to increased blood pressure Reused oils become rancid without refrigeration & generate more free radicals with every re-use. Rancid oils taste worse with every reuse. Gas is very expensive or unavailable in many rural areas. The majority of people cook over open fires indoors. Use of firewood causes respiratory diseases, which ages and kills women who spend hours cooking every day. Over half of the trees cut in the world are used for cooking fires.
11 Solar ovens can be made from many materials, are durable and inexpensive. Cooking w/out firewood eliminates health risks associated with smoke inhalation. Baking requires no oil so rancid oils are not re-used, oil is expensive, re-used many times. Sterilize instruments in rural clinics. Sterilize medical waste. Pasteurize water, milk. There is no refrigeration in many areas & bacterial water-borne diseases are a major health concerns. Herbal Remedies Dona Hora Hernadez with Zauco for lung problems, bark is sangregrado gastritis, from irregular eating schedule, students have this complaint Skin - oatmeal and chamomile soap, causes- allergies, insects, toxic plants, and dirty water Kidney causes are coffee, alcohol, pork, fat, and the agricultural chemicals - herb cola de caballo & yantek Liver (alchohol, cigarates, pork, eggs) - diente de leon estafiate (dandelion) Parasites - Apazote (Chenopodium ambrosioides L.) with milk Consultations -.5$.2$ for medicne for a week and $1 massage
12 How diet has changed: 40 yrs ago refined oils started becoming popular before people cooked w/ pig fat, also factory farms started Public perceptions: being sick is part of life, connection to diet not understood, even most doctors do not connect diet to health. Pharmacies have boomed in the last 20yrs. Pts feel ripped off if they don t get a pill or prescription. There is a list of 72 drugs that you can get w/o prescription though really u can get almost anything, many drugs & pesticides banned in the states make it down here. Biggest Dietary Problems: Soda and fast/fried food it is prestigious to eat fast food seems modern and exciting
