Successful Solutions for Clean Label Challenges Today s consumers are increasingly looking for foods they can trust; food that is closer to nature, and food that s healthy. Case Study: Replace Challenge A customer wanted to create a deli ham that was clean label, allowing for No Artificial Preservatives and All Natural claims, while meeting the same shelf life requirement of 75 90 days. Kerry Technologies: Accel Natural Cure & DuraFresh A combination of dried vinegar and cultured celery was used to provide traditional cured color, texture and flavor, while maintaining fresh keeping over the shelf life of the meat product. Kerry worked with the customer to further clean up the label suggesting to replace dextrose with sugar and Sodium Ascorbate with Acerola Cherry Powder. Boneless Spicy Cooked Ham Water Added (Cured with Water, Salt, Sodium Lactate, Spices, Dextrose, Sodium Phosphate, Paprika, Sodium Diacetate, Sodium Ascorbate, Spice Extractives, Sodium Nitrite) Boneless Spicy Cooked Ham Water Added (Cured with Water, Salt, Spices, Sugar, Dried Vinegar, Sodium Phosphate, Paprika, Cultured Celery Powder, Acerola Cherry Powder)

Case Study: Reduce Challenge A customer wanted to make a reduced sugar strawberry lemonade without the use of artificial flavors, colors, preservatives or high intensity sweeteners. Kerry Technology: TasteSense TasteSense is a natural flavor solution that helps optimize taste in products with up to 30% sugar reduction. In addition to reducing sugar content, Kerry used consumer insights to help the customer identify other ingredients to remove to make the label more consumer friendly. Kerry suggested moving to a product that was frozen or aseptic (tetra-pak) in order to remove the preservatives and artificial colors and flavors. Case Study: Reposition Challenge A boxed meal brand needed help developing a line extension of natural and organic macaroni and cheese to appeal to changing consumer demands.
