47 Members travelled to Beenleigh Historical Village and then onto Harrigan s Drift Inn for Christmas in July Lunch. Unfortunately the cold strong wind stopped some people from exploring the village. YOLANDE S TIPS During the citrus season Orange and mandarin peels can be saved to make pot pourri A mandarin skin (see below) can be used to form a flower. Drying the peels in a fan forced oven 100 degrees until skins are hard and dry. Sprinkle them into a dish or bowl adding dried flowers as well, adding some scented oils to make a lovely smell through the house. Other use for the dried peels, place them in an onion bag (see below) will keep silver fish and other insects away from your cupboards and drawers. No need to add oils to these peels. Allow it to sit for 30 minutes and then squeeze out any excess moisture. Place the egg, parmesan, spring onions, garlic and dried herbs into a bowl and mix with the zucchini. Scoop out a spoonful of the mixture an shape it into patties. Heat the oil in a fry pan, add the patties and cook for 2 minutes, turn them over and cook for another 2 minutes Serve warm. Serve with (options) Avocado, salmon fillet, cherry tomatoes, fresh coriander, lime juice, paprika, salt and pepper or just some goats cheese or yoghurt.
