A recent study at the Center for Brain Health showed that individuals who were engaged in physical activity had improved memory and brain health. The study had individuals perform physical activity three times a week for one hour for a twelve week period. The brain blood flow level was evaluated before the study and after the study. It showed that there was a much greater blood flow to the hippocampus, the main region that is affected by Alzheimer s disease. This is only one of many studies that has shown the benefits of physical activity. There s no better time to get a jump start on your New Year s Resolutions than now, and reap the cognitive benefits! This is the kind of news we would all like to be reminded of during the holiday season. Chocolate contains flavonoids, antioxidants and flavanols. Flavonoids protect plants from environmental toxins and help to repair damage. When eating flavonoids they also give us the benefit of antioxidants. Antioxidants help to protect the body from free radical damage. Flavanols have a high antioxidant content. But don t go reaching for your favorite milk chocolate bar. Dark chocolate contains the highest level of flavanols. You must also take into consideration the processing that the chocolate undergoes. Generally the less processing, the more flavanols that preserved. So don t feel bad if you find the need to indulge in a piece of dark chocolate once in a while. Please keep in mind that there are many other foods that are rich in flavonoids such as red wine, onions, cranberries, and apples, just to name a few. 4

5 Issue 5, December 2013 Bulk Tip of the Month What We re Loving Right Now Victoria s Staff Pick of the Month Bio K "I frequently use Bio K when I m looking for a high probiotic dose that will be used by my body quickly. My favorite is the fermented soy. Holiday baking is once again among us. Save money while using higher quality baking staples by shopping bulk. One of my favorite things to do is to make my own flour. If you purchase gluten free oats you can make your own gluten free flour and substitute out those pricey almond and coconut flours depending on your recipe. How to make your own oat flour: - 1 cup oats rolled oats Food processor or high speed blender Place the oats in your blender and pulse until they are ground to a powder like consistency. Make sure you are stopping and stirring frequently so that all the oats are finely ground. Store the oat flour in a air tight container. You use oat flour just as you would any other flour. Oats are a great source of protein, B vitamins, vitamin E, calcium, and iron. Elderberry Power Elderberries are the fruit from an elder tree and are often taken for colds and flus. Elderberries are high in antioxidants: they help to fight and lower free radicals in the body. They also function as a great immune system booster and are extremely high in vitamin C. The greatest benefits from elderberries appear to be when they are taken within 24 to 48 hours after the symptoms begin. 5

6 Issue 5, December 2013 Grain Free Sugar Cookies Recipe of the Month 1 cup almond meal 1/8 plus 1/16 tsp salt 1/8 tsp baking soda 2 tbsp pure maple syrup, or stevia to taste 1 1/2 tbsp coconut or vegetable oil For maple syrup version: up to 2 level teaspoons milk of choice or extra oil, as needed. For stevia version: 1 tbsp milk of choice, added with the liquid ingredients. 1 tsp pure vanilla extract optional: pure almond extract Directions: This cookies are an excellent addition to your holiday platter! You can indulge just enough with this yummy recipe! Combine all liquid ingredients (except milk of choice if using maple syrup version). In a separate bowl, combine dry ingredients and stir very well. Now mix wet into dry and keep stirring, breaking up clumps as you mix it may seem dry at first, and you can add the extra 2 tsp milk or oil (I did add this when I made the maple syrup version), but do not add any more liquid than the recipe calls for. Roll out dough to cut-out-cookie width, either between sheets of parchment paper or from inside the bag, then cut into shapes. Freeze dough at least 20 minutes before cooking minutes at 325 F on a greased cookie sheet. Let cool another 10 minutes before even attempting to remove cookies from the sheet.
