23 Depression "When researchers monitor eating habits across countries, they find that as fish consumption goes up, depression rates go down. In fact, there is a sixty-fold difference in depression rates across countries from the highest (Japan and Taiwan) to the lowest (North America, Europe and New Zealand) omega-3 fat consumption. Even postpartum depression decreases as women increase their consumption of fish. Many people also report a drop in mood when they switch to a low-fat diet." Book: Somer, Elizabeth, M.A., R.D. 24 Serotonin and Dopamine Over the last decade, neuroscientists have been examining the consequences of omega-3 deficiencies in the central nervous system. Alterations in serotonin and dopamine levels, as well as the functioning of these two important neurotransmitters is evident in an omega-3 deficiency. Logan AC. 25 Blood-Brain Barrier In addition to changing serotonin and dopamine levels and functioning, omega-3 deficiencies are known to compromise the blood-brain barrier, which normally protects the brain from unwanted matter gaining access. Ziylan ZY, Bernard GC, LeFamconnier JM, Durand GA, Bourre JM. Effect of dietary n-3 fatty acid deficiency on blood-to-brain transfer of sucrose, alpha-aminoisobutyrie acid and phenylalamine in the rat. Neurosci Lett 1992; 137: 9-13.
26 Blood Flow Omega-3 deficiency can also decrease normal blood flow to the brain, an interesting finding given the studies which show that patients with depression have compromised blood flow to a number of brain regions. 27 Antidepressant Activity Finally, omega-3 deficiency also causes a 35 percent reduction in brain phosphatidylserine (PS) levels. 31 Basic Construction of Fat All fats are made of the same basic elementscarbon, oxygen, and hydrogen. There can be from four to twenty-eight carbons in the chain, so each type of fatty acid can be classified as short-, medium-, or long-chained.
32 Basic Construction of Fat The carbon chain carries hydrogen atoms. Think of a gooseneck lamp
33 Saturated fats In saturated fats, the carbons in the chain are completely "saturated" with all the hydrogen they can carry. Saturated fats form relatively straight chains that bunch closely together.
34 Monounsaturated Fat Oleic Oil Olive & Sesame oils
35 Polyunsaturated fats Such as corn, soybean, and sunflower oils. Contain fewer hydrogen atoms--from four to twelve fewer atoms. The fewer the hydrogen atoms, the more kinks in the chain. The more kinks, the more fluid the fat.

37 Categorizing Fatty Acids Numbers and symbols represents the fatty acid. First number refers to the total number of carbons in the fatty acid chain. The second refers to the number of carbon double bonds or kinks in the chain. Last or omega number refers to the position of the first carbon double bond.

42 EFA s Necessary for: Healthy cell function Regulators that control the body s well-being.
43 Our Cells The cell is a tiny factory, taking in raw materials from the surrounding fluid and sending out various chemicals and waste.
44 Everything going into or coming out of the cell has to pass through the cell s outer surface its membrane. The membrane depends on essential fatty acids to remain fluid and flexible. Without them, the membrane becomes stiff and unable to do its job.
45 Omega-6 vs. Omega-3 A ratio of roughly 2:1 is optimal. Ratio as high as 40:1. We can convert ALA into EPA and DHA, process is slow rate of conversion varies according to age, gender, and other factors.

49 Omega Oils and the Body's Regulators EFAs create a variety of chemicals, called eicosanoids, (eye-kah-sahnoids) that regulate a wide variety of bodily processes. The Omega-3 and Omega- 6 families each produce their own eicosanoids.
50 Prostaglandins One of the most important groups of eicosanoids is the prostaglandins. In 1982, the Nobel Prize in medicine went to three scientists who had studied more than a dozen prostaglandins.

61 Omega-3s Reduce Mortality Risk In Heart Disease Patients Patients who ate fish and had high serum levels of alpha linolenic acid (ALA), (EPA), and (DHA) reduced their risk of all-cause mortality in direct relation to the amounts consumed. Patients who consumed the most n-3 had a 55% lower risk of death from cardiovascular disease, heart attack, and stroke, and a 51% lower risk of death from coronary artery disease.
