Over 125 K-12 school districts (some of which include over 1,000 individual schools), including: Los Angeles Unified School District (700,000 meals daily) Houston Independent School District (270,000 meals daily) Dallas Independent School District (160,000 meals dail San Diego Unified School District (70,000 meals daily) Detroit Public Schools (45,000 meals daily) The Vancouver School Board is now making Meatless Monday materials available to students. Over 80 universities Over 40 hospitals

25 Key findings Reduced its purchases of animal products by nearly 30 percent while increasing purchases of better meat from Mindful Meats Reduced the carbon footprint (kg CO 2 -eq) of its entire food service by 14 percent from (0.70 to 0.61kg CO 2 -eq per meal served) Reduced embedded water use by nearly 6 percent saving a total of 7 gallons per meal or a total of 42 million gallons of water per year Saved $42,000 by decreasing the amount spent per meal by 1% Increased purchases of fruits, vegetables and legumes by ~10% Increased student satisfaction with local, regional, fresh and tasty meals Served reduced meat or plant-based meals that met or exceeded USDA meal pattern requirements

29 Meatless Monday in the Classroom For younger students: Eat meat-free at home on Mondays and report about it. Write paragraph about how Meatless Monday helps our health, the environment, and animals. Draw a picture with a caption and labels related to Meatless Monday. Make a meat-free recipe together. Use the coloring pages on the Fruits and Veggies More Matters website for fun ways for students to learn about fruits and vegetables.
30 Meatless Monday in the Classroom For older students Encourage students to eat meat-free at home on Mondays; hold classroom discussions about what types of meals they ve tried, how they feel, and what their family s response has been like. Ask students to do a research assignment about how animal agriculture impacts our health, the environment, and animals. Encourage them to start a meat reduction club at the school; holding events and tabling.
