1 De Anza College Contemporary Nutrition N-10 Quarter: Fall 2018 (4 units) Location: S57; M/W 11:30-1:20 Instructor: Gigi Acker, MPH, RD Office Hours: Wednesday 1:30-2:30 pm & Friday 8:30-9:30 am Website: Phone: Office Location: S57 (classroom) Prerequisites: English Writing 100B and Reading 91 or 100 or English as a Second Language 24 or 72 and Mathematics 200 are advised. It is expected that you can do simple math problems, including those that use percentages and ratios. Course Description: The physiological, psychological and practical aspects of obtaining a healthy diet. Relationship of nutrients to health and well-being. Evaluation of current nutritional issues and controversies. Student Learning Outcomes (SLO): Students will be able to: 1. Evaluate a meal plan or a diet for meeting the criteria of a healthy diet. 2. Evaluate nutrition claims about a dietary supplement, food or diet for accuracy and health enhancing potential. Course Materials: Required: One pack of 3 inch by 5-inch index cards, any color. Bring to class every day. Optional Textbook: Nutrition Concepts & Controversies by Frances Sizer & Ellie Whitney Access to the Internet Attendance: Attending class is very important. Every week there are in-class activities (75 points of your grade). In-class activities cannot be made up if absent. If you miss the first day of class, you will be dropped (unless I receive an from you prior to class). After the first day, it is YOUR responsibility to withdraw from the course if you wish to drop. If you miss class, it is your responsibility to obtain class material from a classmate. Exams: I do not give make-up exams except for unavoidable circumstances with documentation of emergency or illness. Please contact me immediately (text, phone or ) this occurs. You will need an 882-E scantron and No. 2 pencil for each exam. Exam questions are taken from the lectures, videos, discussions & in-class activities. The final exam is not cumulative. Important exam rules: o No exam will be handed out after the first exam has been returned and student has left the classroom. o Once an exam begins, you will not be allowed to go to the bathroom & return. o You need to return your exam copy to receive the grade on your scantron o The grade you receive on your scantron cannot be adjusted.
2 o Cheating will result in a 0 on exam & notification to the Dean of Student Development. Assignments: Diet Analysis assignment must be turned in BEFORE the end of the class on due date. An assignment turned in after class ends is considered late. Diet Analysis assignment will be accepted up to 3 classes after the due date. Assignment will be marked down 10% for each class it is late. Extra Credit will be accepted on day & time of your final.
