6 KIDS IN CRISIS X3 Since 1980, obesity rates have tripled among children % 22% 1 in 3 Stroke has increased in kids by 35% Food insecurity puts children at 22% greater risk of becoming obese American kids and teens are either overweight or obese FAMILY MEALS IN DECLINE Families who eat together, stay together; kids less likely to have eating disorders, use drugs/alcohol.

10 OUR MISSION Founded in 2003 in Chicago, Common Threads was created to bring health and wellness to children, families and communities through cooking and nutrition education. By integrating preventative health programs into school districts and community organizations, Common Threads not only helps combat the rising number of diet-related diseases, but also cultivates a culture that embraces a healthier lifestyle and celebrates diversity through food.

15 FOOD PHILOSOPHY The healthy eating principles are at the core of our food philosophy, which is central to the content for all of our programs and recipes: Use whole grains, fresh fruits and vegetables, lean meats (organic whenever possible), hormone-free dairy, low-sodium versions of foods like canned beans and vegetable broths or bouillon, and less-processed fats & oils like cold-pressed olive oil Minimize use of refined sugar, butter and cream Never use products that contain high- fructose corn syrup or hydrogenated oil

Small Bites in a waiting room, mobile food markets, etc.) Healthcare Partnerships: Bringing nutrition education and experiential learning opportunities to patients and professionals in healthcare settings
26 CULINARY MEDICINE - Cooking Up Health Program This program (10-14 lessons) is designed to teach students in medicine and allied health sciences about nutrition and healthy cooking through culinary medicine and community health. Through this course participants will learn basic culinary skills, steps to create nutritious meals, relationships between food, health, and disease, and cultural competencies around nutrition. Participation in the course significantly increased medical students: Nutrition knowledge Self-confidence in eating recommended amounts of fruits and vegetables and cooking skills Understanding of importance of nutrition counseling in patient care Self-confidence in nutrition and obesity counseling
27 But How Can I Teach My Patients TODAY How to Cook For Life?
28 Cooking Demo - Thai Coconut Chicken Curry Ingredients: 1 C light coconut milk 2 T soy sauce 1 onion, brunoise 1 lime, juiced 3 t olive oil 1/2 boneless skinless chicken breast, medium diced 2 t red curry paste ¾ C green onions Basil Directions: Medium dice the chicken and clean station thoroughly. Chiffonade or chop the green onions and basil. Juice the lime. Brunoise (cook with 1 t olive oil) the onions in a small pan. Set aside. Heat 2 t olive oil in a large nonstick skillet over medium-high heat. Add chicken and cook thoroughly, until juice runs clear. Add onion and curry paste to pan, and sauté 1 minute, stirring occasionally. Sauté for 15 seconds. Stir in coconut milk and soy sauce; cook 3 minutes or until thoroughly heated. Remove from heat; stir in green onions and basil. Add lime juice.
