Create a model community that engages community members and organizations in healthy eating and active living through support, advocacy and education. The Community Center ProAction Yates Office for the Aging Yates County Public Health Cornell Cooperative Extension of Yates County Our Town RoCKS Dundee Health Improvement Project Dear Restaurant Owner, The Choose Health Yates Coalition supports Yates County residents in healthy eating and active living through support, advocacy and education. You may have seen our signs in local restaurant windows to show support of our efforts, and may have even participated yourself. To continue our efforts around creating environments that support healthy eating, the Coalition is excited to launch their newest initiative, the Choose Health Yates Toolkit for Restaurants. Included in the toolkit are... Guidelines for healthy menu items and beverage choices Stickers for highlighting healthier menu options Suggestions for strategies around promoting healthier menu options Choose Health Yates posters and flyers to display Additional resources The purpose of the Choose Health Yates Toolkit for Restaurants is to... Encourage and help businesses implement changes, however small or large, to provide consumers with healthier options. Enhance the environments where Yates County residents live, learn, work and play to make the healthy choice, an easier choice. Although specific guidelines are outlined for healthy options, Choose Health Yates welcomes all healthy menu changes. For example: 1. Offering a half size portion of a regular menu item, 2. Offering a side salad or vegetable rather than french fries at no extra charge, and/or 3. Discontinue offering free refills on sugar sweetened beverages. The Choose Health Yates Coalition believes that restaurants are an important venue to promote healthy eating throughout the county. According to the 2013 Restaurant Industry Pocket Factbook from the National Restaurant Association, 45% of adults said that restaurants are an essential part of their lifestyle. With more than 65% of Yates County adults being overweight or obese (NYS Dept. of Health), we all must help to stop this epidemic and improve health in our community. 2 Healthy Meal Guidelines Dietary Guidelines for Americans Each entree plus two sides has: Calories = 700 or less Total Fat = 23g or less Saturated Fat = 8g or less Trans Fat = 0.5g or less Sodium = 750 mg or less No Fried Foods

3 Healthy Side Dish and Beverage Item Guidelines SENSIBLY Each snack or a la carte item has: Fat = 7 grams or less Sat Fat = 2 grams or less Sodium = 360mg or less Sugar = 15 grams or less Each beverage has: 25% or more real juice No added sugar artificial sweeteners or caffeine Is a low-fat milk product Choose Health Yates is able to analyze menu items using nutritional software. 4 Stickers to Mark Healthier Menu Options

5 Strategies to Create a Healthier Environment and Promote Healthier Choices Provide free tap water to all customers. For counter-service restaurants, water should be provided in a self-service area. For table-service restaurants, water can be served at the table by the server. Charge an average price for healthy entrées and healthy side dishes that is no higher than the average prices for other entrées and side dishes. Offer each customer the option of being served half of their meal now and having the other half packaged in a biodegradable take-out container. Provide a 100-percent smoke-free environment, including outdoor seating areas. Feature healthy menu items on a flyer or in radio, television, print or in-store marketing on a regular basis (at least monthly). Offer the healthiest meal combination as the default meal option. Offer a smaller portion size option at a lower price for all entrees. Do not offer beverage options larger than 16 ounces. Do not offer free refills on beverages.

9 HEALTHY MEETINGS AND EVENTS Providing healthy food and beverage choices to people who attend your meetings, fundraisers and other events is a great way to encourage healthy living. Whenever possible, use locally grown produce, meats, etc. Try to incorporate these types of options on your menu or highlight them as specials each day. Snacks Raw vegetables cut up with dressing Fresh fruit with yogurt dip Pita wedges with hummus or peanut butter Air-popped popcorn Unsalted pretzels Tortilla chips with salsa Whole grain crackers Unfrosted cake cut in 2 squares Gingersnaps 2 oatmeal raisin cookies Trail mix (dried fruit and nuts) Breakfast items Fresh fruit cut into easy-to-eat pieces Mini-muffins or cut large muffins in half Yogurt Fruit bread in small pieces Small bagels with cream cheese or fruit spread Hard-boiled eggs Beverages Skim or 1% milk Coffee, regular or decaf Skim or 1% as creamer Tea, hot or cold Bottled water 100% fruit juice Lunches and Dinners Avoid fried foods, cream sauces, gravy Include fresh fruit Include at least one vegetable fresh or cooked Include whole grain breads Serve salads with dressing on the side Cut desserts into half-size portions Offer a vegetarian entrée These guidelines brought to you by Our Town RoCKS Barrington, Starkey, Dundee Health Improvement Project ourtownrocks@ourtownrocks.org

10 Objectives Guidelines for Healthy Meetings The following guidelines are to aid in planning breaks and meals for meetings and events. The first objective is to provide delicious, healthy food choices that contribute to the health of participants, collaborators, volunteers and staff. The second objective is to support local agriculture by promoting foods grown and/or processed in Yates County, the region or New York State when possible. Try to incorporate these types of options on your menu or highlight them as specials each day. General Guidelines: Offer foods rich in nutrients (as opposed to empty calorie foods) in recommended portion sizes. Offer vegetables and fruits whenever possible. Provide pitchers and/or bottles of water. Serve milk (1% or fat free), 100% fruit or vegetable juice, water or iced tea (unsweetened) instead of soft drinks. For meals, provide a 4-ounce serving of lean meat and include a vegetarian option as an entrée choice. Include whole grain breads and cereals. If serving a dessert, provide fresh fruit, fruit crisps or cobblers, sorbet, small cookies or brownies, etc. Consult Cornell Cooperative Extension nutrition educators for food choices and recipe ideas if needed. Break or Snack Suggestions (am and pm): Fresh sliced fruit and vegetable tray with low-fat dips. Whole-grain muffins (cut in half), crackers or granola bars (5g fat or less per serving) Cheese assortment with a low-fat option (1 ½ oz. servings) & whole grain crackers Yogurt, low-fat Nuts (1/2 oz. is a serving), pretzels, popcorn, baked chips, trail mixes, dried fruit Bagels cut in halves or quarters with low-fat cream cheese or jams Small cookies, small individually wrapped chocolates, etc. Provide 1% or fat free milk for coffee and tea

11 Breakfast Suggestions: Fruit, fresh, frozen, canned in juice or dried Yogurt, low-fat High-fiber cereals like bran flakes, low-fat granola and oatmeal Fruit toppings (raisins, dried fruit mix, strawberries, bananas, blueberries, peaches, etc) for hot and cold cereals Hard cooked eggs, vegetable omelets and eggs, 1 to 2 eggs per serving Thinly sliced ham or Canadian bacon Whole grain or part whole grain bagels (cut in half) served with fruit spreads, jams, or lowfat cream cheese Lunch/Dinner Suggestions: Raw vegetables with low-fat dip and fresh fruits Salads with choice of low-fat salad dressing on the side Broth-based soups or cream soups using evaporated skim milk Sandwich platters cut sandwiches in half so people can take smaller portions. Offer mustard and low-fat mayonnaise as condiments on the side. Use whole grain breads Pasta dishes made with part skim mozzarella and part skim ricotta cheese (e.g. pizza, lasagna). Serve pasta with tomato or other vegetable-based sauces. Meat servings limited to a 4 ounce portion Whole grain breads or rolls Baked potatoes with choice of low-fat or vegetable toppings on the side. Salads with dark green lettuces; spinach; beans and peas; grilled, lean meat and low fat cheeses Desserts: fresh fruit or fruit salad, frozen yogurt or sorbet, small cookies or brownies, small individually wrapped chocolates, fruit crisps or cobblers, etc. Provided by Cornell Cooperative Extension of Yates County
