2 Unsaturated and saturated fats, as well as nuts, chocolate, and other fat-filled foods are no longer being ridiculed in the world of food and nutrition. However, the health effects of rancid oils are becoming a hot topic. We monitor your products fat to increase your product s shelf life, consistency, and quality! What is FAT? Fats are molecules called triacylglercol and consist of a glycerol molecule and three fatty acid tails, connected via ester bonds. FAT is the new SKINNY! The fatty acid tails that are attached to the glycerol backbone are what make fats differ from one another. The fatty acids determine the nature of the oil from saturated to unsaturated, which also relates to an oil s stability. 2 3

3 What Makes Fat Go Bad? Not only do products containing rancid oils not taste or smell desirable, but they are also bad for your customers health. 4 Complete Fat Molecule (Triglyceride) Breakdown via Hydrolysis Free Fatty Acids FFA s derive the broken acid chains from the parent molecule. This alteration occurs in unsuitable conditions for the processing and preservation of fats Represents a basic indicator of the integrity of the product Aldehydes Primary Oxidation Primary Oxidation Aldehyde content, specifically non-volatile aldehydes (principally 2, 4-dienals and 2-alkenals), is measured by para-anisidine Aldehydes are the result of peroxides decomposing during secondary oxidation The lower the AV, the better quality the oil Aldehydes are what give a product a rancid smell or taste Very harmful for human consumption Secondary Oxidation Peroxides Lower PV typically means the oil is healthier and of higher quality Low PV can also be caused by extensive secondary oxidation in aldehydes/anisidines PV is a primary indicator that the product will go rancid quickly A value to use that can easily indicate a product s shelf life 6 7

There are three methods in place by the American Oil Chemists society to monitor free fatty acids (FFA), peroxide value (PV), and p-anisidine value (AnV). Each method typically involves a skilled lab tech, large amounts of hazardous chemicals, and a large time investment. How cdr FoodLab Works The cdr FoodLab Analyzer is a pre-calibrated spectrophotometer that utilizes LED light sources. These light sources have fixed wavelengths in order to determine a multitude of parameters in fats and oils, dairy products, vegetable purees, flours, wine, beers, and more. Plastic disposable cuvettes come pre-filled with reagents specified to each test, decreasing chemical usage and disposal. In-House with Minimal Training 10 11

7 LED Light Source Each reading cell has an LED light source that is set to a specific wavelength. With our LED s, there is no need to adjust the lamp to a specific wavelength. Detector The detectors measure the absorbance.
