2 1. Berikan penjelasan untuk tiga perkara di bawah: Give explanation for three of the following: (a) (d) (e) Berikan definasi Keaktifan air (a w ). Terangkan mengapa susu dan oren mempunyai nilai keaktifan air yang hampir sama ~87% tetapi susu lebih cepat rosak dari oren. Define Water activity (a w ). Milk and orange have about the same value of water activity of about 87%. Explain why milk degrades much faster than orange. Perlindungan kryo kepentingan dalam industri pemakanan. Cryoprotection importance in food industry. Protein mudah dan protein berkonjugat. Berikan contoh. Simple protein and conjugated protein. Give examples. Lisina-asid amino paling reaktif. Terangkan mengapa melamina adalah adulteran yang popular dan bagaimana ia boleh di kesan didalam sampel makanan. What is adulterant and melamine? Explain why melamine is a popular adulterant and how can it be detected in food samples. (10 markah/marks) (i) Terangkan dan bincangkan pemerhatian yang tertera dalam Jadual 1. Untuk tiap-tiap hidrida yang tertera, tunjukkan bahagian molekul yang merupakan penderma ikatan hidrogen dan penerima ikatan hidrogen. Terangkan jawapan anda. 4 3. Jawab dua dari berikut: Answer two of the following: (a) Namakan dan terangkan secara ringkas dua jenis tindak balas kimia atau biokimia yang boleh berlaku pada makanan. Terangkan bagaimana gula anhidrida boleh terbentuk dalam proses pengkaramelan. Di bawah adalah struktur glukosa. Lukis dua struktur anhidrida glukosa yang boleh terbentuk. Name and explain briefly two types of chemical or biochemical reactions that could happen in food. Explain how sugar anhydrides can be formed in the caramelization process. Below is the structure of glucose. Draw two possible structures of glucose anhydrides. Glukosa Glucose Apakah gelatin? Bagaimana ia terbentuk? Gelatin adalah protein yang boleh dipanaskan tanpa menyebabkan perubahan ketara pada kestabilannya. Fenomena ini ada kaitan dengan kandungan sisteina dan prolina. Terangkan. What is gelatine? How is it formed? Gelatine is a protein that can be boiled without significant change in stability. This phenomena is related to the content of cysteine and proline. Explain. Protein daging lebih stabil terhadap haba dan suhu rendah berbanding protein ikan. Contohnya daging lembu memerlukan lebih masa pemanasan untuk lembut berbanding dengan daging ikan dan apabila disejukbekukan daging ikan mengeras dan kurang fleksibel berbanding daging lembu. Terangkan. Meat protein is more stable towards heat and low temperature as compared to fish protein. For example, meat flesh needs more heating time in order to soften it as compared to fish flesh while at freezing temperature the fish flesh toughens and degraded more easily than the meat flesh. 5 4. (a) Pertimbangkan gula ringkas X yang mempunyai struktur kimia seperti di bawah. Suatu disakarida Y dibentuk dari X melalui ikatan asetal alfa. Berdasarkan unjuran Fischer untuk X, lukiskan unjuran Haworth disakarida Y tersebut. Ikatan asetal mesti ditunjukkan, dilabel dan dinamakan secara jelas. Berikan juga formula kimia bagi disakarida Y. Consider the simple sugar X which its chemical structure is as shown below. A disaccharide is formed from X through an alpha-acetal linkage. Based on the Fischer projection of X, draw the Haworth projection of the disaccharide Y. The acetal linkage must be clearly shown, labeled and named. The chemical formula of disaccharide Y must also be given. X (5 markah/marks) Disakarida Y di (a) ditindak balaskan dengan asid dan seterusnya diuji dengan reagen Tollens dan Benedict s. Ramalkan keputusan ujian tersebut dan beri justifikasi. The disaccharide Y in (a) is subjected to acid and then tested with Tollens or Benedict s reagent. Predict the outcome of the test with justification. (5 markah/marks) Pertimbangkan pernyataan berikut: Semua monosakarida adalah gula penurun manakala semua disakarida adalah gula bukan penurun. Bincangkan samada anda bersetuju dengan pernyataan tersebut dengan menggunakan contoh yang sesuai. Jelaskan bagaimana anda boleh membuktikan perbincangan anda secara ekperimen. Consider the following statement: All monosaccharides are reducing sugar while all dissacharides are non-reducing sugar. Discuss whether you agree with the statement with suitable example. Suggest how could prove your discussion experimentally. (7 markah/marks) 5/7

Discuss the importance and application of the following products in the food industry. Describe the production process from starch. xylitol sorbitol galactitol (8 marks/markah) 5. (a) Minyak dan lelemak semulajadi mengandungi rantai asil tak tepu dalam konfigurasi cis. Terangkan kehadiran lelemak-trans dalam produk minyak dan lelemak terproses seperti mentega. Natural occurring fats and oils contain unsaturated acyl chains in their configuration. Explain the presence of trans-fat in processed oils and fats products such as butter. (5 markah/ marks) Cadang dan jelaskan satu proses industri yang boleh digunakan untuk menghasilkan hasil yang mempunyai ketepuan yang dikehendaki tanpa pembentukan lelemak-trans. Tuliskan persamaan kimia untuk menggambarkan proses tersebut. Recommend and explain an industrial process that can be used to produce the desired saturation levels without formation of trans-fat in the industry. Write a chemical equation to illustrate the process.
