Garrett, R.H. and Grisham, C.M Biochemistry, 2 nd ed. Harcourt Brace Description: This course is designed to give students in Animal Science, Foods and Nutrition, and related fields a solid foundation in applied biochemistry and physiology related to nutrient use and regulation. The course will focus on post-absorptive use of nutrients as sources of energy and for the synthesis of macromolecules. Lectures will include discussions of whole animal energy and protein metabolism, the basis of nutrient requirements, and the methods of assessing energy and nitrogen balance. The role of the major organs in nutrient metabolism and their contribution to nutrient demand and balance will be emphasized. How nutrients are partitioned between tissues in a variety of physiological states will be discussed to provide students with a conceptual understanding of the role of metabolism in health and disease.
2 Objective: Provide a base of knowledge in nutritional biochemistry and physiology, and to reinforce skills in critical review of journal papers. Students will understand: 1. The biological basis of energy expenditure and the methodologies available for measuring energy balance 2. The metabolic pathways available for nutrient use 3. The role of the major organs in maintaining nutrient homeostasis 4. The role of hormones and nutrients in regulating nutrient use 5. The integration and regulation of nutrient partitioning during normal and abnormal physiological states. Evaluation: Points Midterm exam 100 Final 100 Assigned paper review 50 Current Trends: 50 Student led discussion Paper Reviews: 1. Assigned papers. Three papers will be assigned for written review. Papers will acquaint students with current literature in the field and reviews should evaluate the logic of the hypothesis and methods, the strength of the results, and how the paper fits into your overall understanding of the topic area. Specific requirements will be distributed with each paper. 2. Research of Current Trends. This course will emphasize energy metabolism and will use obesity as an example of dysregulated energy balance. Obesity is a world-wide concern because of the increased incidence of associated clinical problems collectively referred to as the metabolic syndrome. Two class sessions will be devoted to student-led discussions addressing the role of diet in obesity. Is diet to blame? Are specific nutrients to blame? Can diet prevent obesity? What is the role of exercise/activity? The primary objective is to extend our understanding of metabolism and to explore how metabolism might be altered to trigger weight gain and how dietary therapies might prevent and correct energy imbalance. Students will search current literature and present a research based summary of the metabolic basis for how diet impacts energy imbalance. We have provided a list of topics that students may choose from, or you may suggest a related topic based upon your own strengths and interests. Contact Dr. Ajuwon/Donkin/Ellis by Thursday January
3 26 regarding your choice of topic. Teams of 2 to 4 students will be formed and teams will work together to prepare the presentation. Topics: A. Diet and genetic imprinting Does maternal diet predispose offspring to obesity and clinical disease? Does early childhood diet predispose offspring to obesity and clinical disease? B. Specific diets Does the Mediterranean diet prevent weight gain Does carbohydrate (e.g. fructose) intake promote weight gain? Do high protein diets (e.g Atkins) prevent weight gain? Does the type of dietary fat promote or prevent weight gain? What are the Super Foods and do they work? C. Specific nutrients Natural products Synthetic products D. Therapy Does gastric surgery or banding prevent weight gain? E. Effect of exercise/activity on metabolism, energy balance and health. Evaluation. Points will be based on three criteria. a. Written summary or abstract of the topic 1 report per group b. Peer evaluation of the group presentation c. Instructor evaluation of the group presentation and student participation
