Officer, Committee and District Reports John Ennen Spokesperson: Safe Food for Senior s initiative. Promote recognition of CDM, CFPP. Day at the Capital. John visited with John Marty of the MN Health and Human Services Committee. John and ANFP member Marie Nelson visited with Tina Libeling - member of the House and Human Services Committee. There were several recommendations received from these visits for ANFP to work on before meeting with MN State Senator Kathy Sheran who chairs the Health and Human Services Committee. 1. Provide more data to support the initiative, including incidence of food related issues at facilities with CDM as opposed to those without. 2. Develop relationship with Aging Services lobby group. 3. Develop relationship with the MN Dept. of Health. John contacted ANFP member Colleen Zenk regarding these three issues. Colleen has agreed to help in these areas. They also recommended that we align our administrators with us as legislators do not wish to play referee between groups. Legislators are reluctant to impose an additional regulation by supporting our initiative. Next step - meet with Senator Sheron as chair of the Health and Human Services Committee in her District. ANFP member Mariann Wels lives and works in Senator Sheron s District and will host her and John at a future meeting. Iowa ANFP is presenting this initiative at a Federal Level. After the board meeting our social hour and Valentines project went very well, we signed our names, put address labels and stamps on 537 Valentine s cards. Thanks to those who stayed and made it a lot of fun! I was also very surprised when all the board members sang Happy Birthday to me, yes it was my birthday on January 11th and I was happy to spend it with all my ANFP friends! 10 Minnesota Member Highlights Meet Monica from District 1! Monica Thesing, CDM, CFPP, has worked eleven years as an Equipment Specialist for Custom Foodservice Design Company for Robert Rippe & Associates Inc.; Minnetonka, MN. Altogether she has spent twenty-two years working as a Certified Dietary Manager/Foodservice Director. Monica s interest in foodservice management started in high school when she worked at a restaurant. While she attended college she worked at a long term care facility as an evening cook/supervisor, and also at the college foodservice in production & catering because she felt this would be a good path to pursue. Monica earned a BA Individualized Study with an emphasis in Foodservice Management and a minor in Business from Winona State University, Winona, MN. After she graduated, while working in College Operations, she was a Foodservice Director for ARAMARK in several locations in the Midwest including Bemidji State University, Bemidji, Minnesota; Waldorf College, Forest City, Iowa; Washburn University, Topeka, Kansas; and Macalester College, St. Paul, Minnesota as well as several others over a twelve year period. In her current position, she is responsible for cost estimating, equipment selection/research, specification writing and communicating with CAD staff to aid in development of foodservice systems and plans that best meet the client s needs. I asked her if there was a particular person who mentored her over the years and she said, I worked with several great people, with ARAMARK I think Ken Miller, my District Manager was a great influence. While working at Roseville Good Samaritan, I was encouraged to pursue my certification thru ANFP by the administrator. Her membership in Association of Nutrition and Foodservice Professionals is so important to her: I think that the group is a GREAT resource and the conference that we have is a refreshing way to highlight continuous skills that we use every day and to get that pick me up and new ideas to carry us thru in our day to day positions. Monica says the biggest challenge about being a dietary manager is trying to please everyone s food tastes and getting staff to follow thru on their job descriptions. She balances those challenges with her strengths. I have always felt the ability to serve good food to people, plan special menus & events, receive instant feedback on your work, being able to be creative is a people job as much as a foodservice job. The ability to see the whole picture, being able to change things smoothly and keep the flow going, and being a good listener (to customers, staff, coworkers) are the tools she cited as her most important used on the job. And you need to have a passion for what you do; it s really not just a JOB. She advises fellow dietary managers to always get to know and to work with your staff. Since you are only as successful as the staff you are working with and every position is important. Monica has twelve brothers and sisters. When she s not working she enjoys singing. She was in a community group that performed at Senior Living Facilities of all kinds and she sings in the church choir. What an awesome passion you have for your job, Monica! Thank you for taking the time to share your hard earned knowledge with us. Do you have a fellow CDM member you think would be great to highlight in the newsletter? me at hmb@myclearwave.net. ~Heidi Brandes, CDM, CFPP ~ 10 ~

11 Thank You Letter Friday, January 11, 2013 Minnesota Association of Nutrition & Foodservice members Dear colleague, Thank you for your interest in talking to your administrator or other interested party about the Association of Nutrition & Foodservice Professionals (ANFP) Safe Food for Seniors initiative. Because Safe Food for Seniors requirements are currently not in Center for Medicare and Medicaid Services (CMS) regulations, ANFP is pursuing this initiative at both the federal and within those states that have not adopted such requirements. Eighteen states have attempted to address this gap in CMA regulations by requiring certification, but at present Minnesota is not one of those states. Safe Food for Seniors would fulfill the intent of existing federal (CMS) regulations requiring that Skilled Nursing Facilities (SNF s) have a registered dietitian, but mistakenly assume that the Registered Dietitian is always present at such facilities. Safe Food for Seniors would augment the regulations to ensure that the director of food services at SNF s receiving federal funds, if not a full-time dietitian, be trained as a Certified Dietary Manager, Certified Foodservice Protection Professional (CDM/CFPP); or a Dietetic Technician, Registered (DTR); or have the equivalent training from military experience or traditional education. We appreciate your help and want you to know that we re working with the Minnesota Department of Health, with the Food & Drug Administration in Washington, D.C., are in contact with Aging Services of Minnesota, and are scheduling follow up meetings with legislators. I look forward to working with you in our endeavor to ensure food safety for our senior population. Sincerely, Sue Tackaberry, CDM, CFPP Minnesota ANFP President Aetna Ave NE 2500 Pahl Avenue NE Monticello, MN St. Anthony, MN John Ennen Minnesota ANFP State Spokesperson stackaberry@5sqc.com john.ennen@usfoods.com ~ 11 ~

12 Membership Congratulations and Welcome to New Members and New Student s Below are the names of new members and new student members from Minnesota who have joined since the last newsletter. The names of those who have enrolled in an approved dietary manager training program, but have not yet joined DMA (enrollees) are listed as well. Please be sure to share this information with chapter officers, other committee chairs, and especially district officers to ensure that each new member is welcomed into DMA. Consider the following ideas: Send welcome letters to new members or call them to welcome them. Please find a sample phone script and sample letter at under Volunteer Resources. List the names of the new members, new student members and enrollees in the state newsletter and on the chapter web site. Invite these members to the state meeting, recognizing those that attend. Encourage enrollees to join DMA as student members discuss the benefits of membership. Start a telephone tree to contact prospective members. It is important to understand that the Member Count by State report article currently includes student members. When chapter rebates are determined, students are not counted in the total that determines the rebate amount. This encourages chapters to help their student members upgrade as soon as possible, because it adds money to chapter budgets and more importantly, gives students active status and the ability to vote and hold office. We hope that you will use these tools to connect these new members and potential members to DMA and the valuable services that the association provides. Adam C. 16 You Could be the Next MN ANFP President-Elect or Treasurer Dear MN ANFP members: As most of you know I have been involved in ANFP (DMA) at the state and national level for many years. I cannot tell you how much that involvement has changed my life. It has given me opportunities that would not have been there had I not volunteered to help lead this organization. I have developed and strengthened leadership skills, gained knowledge and expertise that has shaped the person and the professional that I am today. I have mentored others which has brought me enormous satisfaction and I believe has made a significant difference in the lives of those I have mentored. I have especially enjoyed being on the Foundation Scholarship Committee in which I help make it possible for new members to finish school and to attend leadership training and national meetings. It has also shaped my career as the skills I gained as a CDM opened up job opportunities. But the best part of my volunteer experiences with ANFP has been the friends I have made friends that will go with me into old age and that have enriched my life in ways that I can t even begin to tell you. Because I was willing to step outside my comfort zone, I have also traveled to places I probably would have never seen and have memories which I can enjoy when the rocking chair will be the only vehicle I am allowed to drive. All of that because I was willing to say yes when asked to serve as an officer or committee member. ANFP has also changed a lot as the world has since I got involved the first time. It will continue to change (and has to) in order to meet the needs of its members and the changing industry. Little did I know when I first got talked into being a district president back in 1988 that I would find it so rewarding that I would continue to volunteer year after year. I never would have imagined that I would eventually serve as MN state president, your national president in , the founding chair of Healthcare Caterers International and now as a member of the Certifying Board. It was just a matter of taking one thing at a time. You don t have to volunteer to the extent at which I have been involved in ANFP but each one of you has much to offer even if you only take one position for one year. ANFP needs good leaders now and in the future. You have a chance to be one of those leaders. We all are busy, we have jobs, families, stress at work, and may even feel we aren t up to the challenge. Please don t let that stop you from getting involved. There is never a right time. And most of you are very good at multi-tasking or you wouldn t be CDMs. Start small take a district or a state office and go from there. Take that first step and volunteer and take it one step at a time. You won t regret it. And if you are concerned about the cost, most of the expenses as an officer are reimbursed at the state and national level. MN ANFP is looking for officer candidates for The president-elect and treasurer positions are open. Please accept my challenge and volunteer to run for one of these positions or to help out your district. Contact Heidi Brandes or hmb@myclearwave.net to volunteer. You can also contact me by or phone if you want to discuss with me. I am happy to answer any questions you might have.
