9 SDS-PAGE analysis of dietary proteins that were exposed to trypsin and chymotrypsin in the presence or absence of conjugated bile acids. For each protein, the following treatments were performed: (a) protein control in 20 mmol/l sodium phosphate, ph 7 (no incubation); (b) protein treated with 0.1 mg/ml trypsin and chymotrypsin at 37 C for 15 minutes; (c) protein treated with 0.1 mg/ml trypsin and chymotrypsin and 10 mmol/l physiologic bile acid mixture at 37 C for 15 minutes. All mixtures were incubated at 37 C for 15 minutes before heat deactivation and application onto SDS- PAGE.
