3 High Demand, Limited Supply The current situation is ripe for fraud High demand: Increasing Limited supply: Due to demand for honey varroa mite and other bee worldwide, especially in diseases the bee colonies emerging BRIC* countries. had been significantly reduced during the recent Demand in industrialized years now leading to countries on high level, only limited supply of high interest in organic (nonadulterated) honey from honey dew on the world quality blossom honey and proven geographical & market. botanical origins is on the rise. *BRIC: Brazil, Russia, India, China ** Report European Comission 2015 Incentive for frauds: This shortage situation create an environment for fraud. Governmental control institutions** estimate that 1 in 5 packages of honey on the market is a commercial fraud - either in regard to adulteration (addition of sugars or fructose-glucose syrup) or wrong declaration of geogra-phical or botanical origin. In the first case the honey packers save costs since sugar syrup is much cheaper and in the second case they can get a higher price for a more preferred geographical & botanical origin. 4 Why Analyze Honey High Demand, Limited Supply If honey is tested at all, a combination of manual and analytical scientific methods are involved and can take days to perform. Current methods are unable to differentiate between honey and other honey like substances such as sugar syrup Honey sold in the United States is 100% pollen-free, which means conventional methods are unable to test the authenticity of these products The majority of honey on the market is actually a blend of honey from different sources. Quality honey can be blended with inferior product to fulfill demand Honey packers incoming QC is a challenge need to confim that thier incoming honey really is honey China exports more honey than it can produce... Chinese honey is often a sugar syrup with other ingredients Detection of Chinese honey in a pure honey is often a task for the analyst March 6,
