4 About the Founder Paul Stamets Paul Stamets expertise and integrity assure the highest-quality, unparalleled, premium organic mushrooms available today. Paul Stamets, D.Sc. has been a dedicated mycologist for over thirty years. Over this time, he has discovered and coauthored four new species of mushrooms, and pioneered countless techniques in the field of edible and functional food mushroom cultivation. He received the 1998 Bioneers Award from The Collective Heritage Institute, and the 1999 Founder of a New Northwest Award from the Pacific Rim Association of Resource Conservation and Development Councils. 6 Traditional Use Mushrooms have been used crossculturally for centuries as food, clothing, tools and medicinals. 9 Multiple Mushroom Species As a Wellness Strategy Research by Paul Stamets demonstrates that a combination of mushroom species increased immune activity compared to single mushroom species. Optimal Host Defense In 2003, a study was published in the International Journal of Medicinal Mushrooms, Potentiation of Cell-Mediated Host Defense Using Fruit Bodies and Mycelium of Medicinal Mushrooms. 10 The Mushroom Life Cycle The Mushroom Life Cycle: The mushroom life cycle remains largely invisible to most mushroom hunters; not so to cultivators. The mushroom cultivator follows the path of the mushroom life cycle. 11 Fine fungal filaments known as hyphae grow from the spores. Compatible hyphae mate to create fertile mycelium. Mycelium condenses into hyphal knots, which then develop into primordia or baby mushrooms. Inoculation: Spores alight upon a growth medium (or substrate). If conditions are favorable, spores will germinate. Spore Germination: Fine fungal filaments known as hyphae grow from the spores. Compatible hyphae mate to create fertile mycelium. Mycelial Expansion: Developing mycelium breaks down organic matter and absorbs nutrients from its surroundings. During this stage of growth, mycelium expands at an exponential rate. In its environment, mycelium encounters many competitors and predators which it repels with an amazing array of protective enzymes and compounds. In this sense, the mycelium is the immune system of the mushroom. Hyphal Knot: Mycelium condenses into hyphal knots, which then develop into primordia or baby mushrooms. Primordia Formation: The mushroom organism produces an amazing array of enzymes and optimizes the constituents of both the mycelium and the developing fruitbody. Fruit Body Selection: From thousands of primordia, the growing organism selects the most promising few to develop into mature fruitbodies. Mature Fruit Body: The organism channels all of its energy and nutrients to develop the fruitbody, which will then produce spores. Spore generation is the sexual reproduction phase of the mushroom life cycle. Spore Release: The fruit body releases spores into the environment for propagation. 13 Supervision by Paul Stamets Paul Stamets, with over 35 years of experience, is the world leader in functional food mushroom research - whose books are recognized as the standards of the mushroom cultivation industry (See page 42, Books by Paul Stamets). 2 Preserved Genetic Integrity Host Defense mushrooms are genetic matches to species found in the wild. We are able to ensure this integrity by following a method developed by Paul called Certified P Value. P Value is a scientific system of measuring the generational age of each species to preserve genetic strength, and is key to providing fungal strains with the greatest efficacy and vitality. The higher P Value gets, strains degenerate and die out. 44 Glossary Arabinoxylane A compound comprised of two sugars: arabinose and xylose, and derived from the conversion of rice bran via extracellular enzymes exuded from mycelium. Enhances immune response. Beta-Glucans Polysaccharides found in mushroom cell walls, formed of sugar molecules arranged in specific patterns, and notable for immune modulation. Ergosterol A biological precursor (provitamin) to vitamin D2, native to fungal cell membranes. Extracellular metabolites Substances excreted from fungal mycelia into the growth medium. These compounds include enzymes, acids, sterols, antimicrobials, etc., whose functions range from digesting the substrate to protecting the organism from predators and competitors. Fruitbodies The reproductive phase of the fungal organism that holds the spores for propagation. This form typically has a stem and cap. Functional food Food-based products containing additional health-promoting benefits beyond basic nutrition. Galactose Simple sugar (monosaccharide) found in plants, fungi, and dairy products. Spores Seed-like structure of fungal life cycle containing genetic material that is matured in the fruitbody and ejected into the environment to propagate the species.
