Tandakan penderma ikatan hydrogen dan penerima ikatan hydrogen pada sebatian I Indicate the hydrogen bond donor/s and acceptor/s in compound I. (6 markah/ marks) 2. Apakah adulterant? Melamina adalah adulteran yang popular. Terangkan mengapa dan ia banyak digunakan sebagai adulterant dalam produk apa dan nyatakan bagaimana ia boleh membahayakan kesihatan. What is an adulterant? Melamine is a popular adulterant. Explain why and in what products it is used as adulterant, and how can it be dangerous to health. (6 markah/ marks) 2/11

3 3. Adakah air terikat merupakan air aktif? Mengapa air terikat tidak bersifat seperti air biasa (takat didih, takat beku)? Is bound water considered as active water? Di antara tiga asid amino di bawah, yang manakah paling mudah mengalami tindak balas Maillard? Terangkan jawapan anda. What is Maillard reaction? What are the measures that could be taken to reduce the presence of this compound in fried food such as french fires. Terangkan mengapa albumin mempunyai suhu koagulasi yang lebih rendah daripada kaseina. Lukis hasil tindak balas yang mungkin bagi salah satu yang berikut: Draw the possible reaction products of either one of the following: (a) Hasil pengoksidaan (sekurang-kurangnya 3) metionina atau sisteina. Oxidation products (at least 3) of methionine or cysteine. (b) Hasil hidrolisis dan dehidrasi (gula anhidrida) laktosa. Hydrolysis and dehydration products (sugar anhydrides) of lactose. (c) Cadangkan peralatan analisis yang boleh digunakan untuk mengecam hasil-hasil diatas dan terangkan jawapan anda. Suggest what analytical instrument can be used to detect the above products and explain your answer. (6 markah/ marks) 7. Bincangkan ciri-ciri protein beras dan protein gandum. Discuss the characteristics of rice protein and wheat protein. (8 markah/ marks) 6/11

7 8. (a) Pertimbangkan gula ringkas X dan Y yang mempunyai struktur kimia seperti di bawah. Suatu disakarida Z dibentuk dari X dan Y melalui ikatan asetal alfa. Berdasarkan unjuran Fischer untuk X dan Y, lukiskan unjuran Haworth disakarida Z tersebut. Ikatan asetal mesti ditunjuk, dilabel dan dinamakan secara jelas. Berikan juga formula kimia bagi disakarida Z. Consider simple sugar X dan Y which their chemical structures are as shown below. A disaccharide Z is formed from X and Y through an alpha-acetal linkage. Based on the Fischer projection of X and Y, draw the Haworth projection of the disaccharide Z. The acetal linkage must be clearly shown, labeled and named. The chemical formula of disaccharide Y must also be given. The disaccharide Z in (a) is subjected to acid and then tested with Tollens or Benedict s reagent with heating. Predict the outcome of the test with justification. (c) Pertimbangkan pernyataan berikut: Semua monosakarida adalah gula penurun manakala semua oligosakarida adalah gula bukan penurun. Bincangkan samada anda bersetuju dengan pernyataan tersebut dengan menggunakan contoh yang sesuai. Consider the following statement: All monosaccharides are reducing sugar while all oligossacharides are non-reducing sugar. Discuss whether you agree with the statement with suitable example. 7/11

8 (d) Produk yang berikut boleh dihasilkan dalam industri makanan dari kanji melalui dua (2) proses bermula dari kanji. Namakan proses yang terlibat dan seterusnya, huraikan proses penghasilan yang merangkumi keduadua proses yang dinamakan. The following products can be produced in the food industry from starch through two (2) processes. (a) Anda dibekalkan dengan satu sampel minyak yang merupakan cecair pada suhu bilik. Cadangkan satu modifikasi kimia yang boleh dijalankan untuk meluaskan aplikasinya dalam produk makanan. Jelaskan bagaimana modifikasi yang dicadangkan boleh dijalankan; dan perubahan ke atas ciri-ciri kimia serta fizikal sampel tersebut. Berikan satu contoh produk hasil modifikasi yang dicadangkan. You are provided with an oil sample that is liquid in appearance at room temperature. Suggest a chemical modification that can be conducted in order to diversify its application in food products. Explain how the suggested modifications can be carried out; and the chemical and physical changes on the oil sample. Give one product that is produced through the suggested modification. (10 markah/ marks) (b) Anda dibekalkan dengan minyak masak yang dihasilkan dari buah zaitun dan sawit masing-masing. You are provided with cooking oil produced from olive and palm fruits respectively. 8/11

9 (i) Komen terhadap persamaan dan perbezaan di antara kedua-dua minyak masak tersebut dari aspek kandungan kimia. Anda boleh menggunakan struktur kimia atau gambarajah untuk menggambarkan jawapan anda. Comment on similarities and differences between the two cooking oils in terms of chemical composition. You may illustrate your answer using chemical structures or suitable diagrams. (ii) Seorang pengilang perlu membuat keputusan samada menggunakan minyak zaitun atau minyak sawit untuk menggoreng mee segera. Berikan cadangan anda dengan justifikasi. A manufacturer needs to decide whether to use olive oil or palm oil for frying instant noodles. Recommend your choice with justifications. (iii) Bincangkan hasil yang akan diperolehi dari proses interesterifikasi antara minyak zaitun dan minyak sawit. Berikan komen ke atas perubahan kimia yang diharapkan. Discuss the product obtained from an interesterification process between olive oil and palm oil. Comment on the desirable chemical changes. 9/11
