1 Sprenger Cattle Co. Angus Bull Sale Cattle with a Purpose Beyond Performance Selling 8 Top Cut 2 Year Old Bulls, 20 Top Cut Yearling Bulls and 4 Herd Sires from Bolze Ranch Angus, Wednesday, June 20, 2012 at the Ranch in Sidney, Nebraska 1:00 MST
2 Cattle with a Purpose Beyond Performance Sprenger Cattle Co is an Angus seedstock operation owned and operated by Brian and Kari Sprenger. Our home is in the high plains region of western Nebraska near Sidney. Our cows are managed in a lower input environment often alongside our commercial cows. The cows are expected to graze year round on native range and or crop residue. The only supplement they receive besides mineral is in the form of protein at necessary times in the year. The cows and heifers are expected to deliver a calf unassisted beginning in May and wean a quality calf, without creep feed, in late November or early December. We do not chase numbers, and we do not chase size. We have sought out cattle with a moderate frame with adequate milk, adequate growth and adequate performance. Due to our desire to maintain a cow herd with these attributes we have chosen to not subscribe to the bull of the month club. Instead, we have identified a select group of cows within our herd that we are using sons out of to propagate the form that works in our environment. Recent Expansion In December of 2010 we expanded our herd with the leasing of the Bolze Angus Ranch cow herd. The Bolze Ranch Angus cow herd has resulted from 30 years of intensive AI mating s to proven bulls that excel in the preweaning traits including moderation of BW for direct calving ease plus maternal calving ease, moderate growth (frame score 4-5 mature cows weighing #), moderate milk, fleshing ability with minimal supplementation, good feet and legs as well as udder quality. Carcass traits receive lower priority with emphasis on moderate carcass size, ribeye area per unit of carcass weight, marbling and percent retail product. The Maternal Side of the Equation The goals of our programs have been set in stone for quite some time. We believe that we must maintain our focus on the Maternal traits in our cow herds as they are the Heart and Soul of the ranch. To this, we feel that there are more traits to consider than milk EPD s when talking about Maternal Traits. Traits such as fertility, calving ease, fleshing ability with minimal supplementation, sound feet and legs, disposition, maternal instinct at calving and adequate milk production. All of these traits lend themselves to cow longevity which is a key component to reducing our costs of inputs. We feel that the race for increased performance in both growth and carcass traits has adversely affected these conveniences that so many have taken for granted. It has been our objective to select our own seedstock with these traits in mind. We have chosen to select bulls out of cows with a proven track record to excel in Maternal Traits. For sale this Spring are bulls out of: B R Sustain Reg. # EPD Profile BW 1.9 WW 44 YW 75 Milk 21 6 year old bull out of a younger cow with generational proof of Maternal performance and sired by Pinebank Waigroup 41/97. 5 Beef Image Analysis (BIA) Ultrasound BIA live animal carcass ultrasound is an automated, chuteside software system that captures images and calculates trait measurements on an objective basis. The traits determined by BIA ultrasound software are: Ribeye Area (REA), Backfat Thickness (BF), Ribeye Area/Hundred lbs Live Weight (REA/CWT), Percent Intramuscular Fat (% IMF), Ribeye Shape Score (RES), Stress Score (SS), and Tenderness Score (TEND). Tallgrass Beef Company Optimum Ranges Harvest Age Animal: REA = BF = in. (At Yearling Ultrasound) BF = in (At Harvest) REA/CWT = (At Yearling Ultrasound) REA/CWT = (At Harvest Dressed Weight Basis) % IMF >= 3.5% + (USDA High Select or better) RES >= SS = <=20 TEND = <=25 QG = High Select High Choice YG = <=3.9 HCWT = lbs Code Explanation: RES = Ribeye Shape Score. Indicative of desired shape of the ribeye muscle. Correlated to eventual Yield Grade, Cutability, and % Retail Product. Score ranges from 0.0 to 1.0. Acceptable score is 0.35 or greater in yearling bulls, with an ideal score being 0.45 or better. Ideal score in heifers is 0.35 or better, with acceptable scores of 0.30 or better. SS = Stress Score. Correlated to immune system strength of calf. Score ranges from =No Stress, 20=Slight Stress, 30=Slightly Moderate Stress, 40=Moderate Stress, 50=Severe Stress. Impacts DTF, ADG, WDA, TCOG, Health Costs, QG, and YG. Ideal score is 2.0 or less. TEND = Tenderness Score. Correlated to actual Warner-Bratzler Shear Force (WB) in carcass ribeye steak at 12 th rib location. Correlation Coefficients between WB and TEND currently average Score ranges from =Very Tender, 20=Tender, 30=Slightly Tender, 40=Slightly Tough, 50=Tough. Ideal score is 25 or less. Acceptable score in yearling bulls is 28 or less.
