1 TRACKS Lesson Plan Breakfast and Calcium Begin with Breakfast Grades 5 8 Boys Club I. Nutrition Education Goal & Objective: Goal 1: Students will comprehend concepts consistent with USDA guidance related to eating and physical activity for good health Objective: As a result of Pennsylvania s SNAP-Ed plan, students will know, understand, analyze, and apply concepts, as developmentally appropriate, that are consistent with USDA guidance about the benefits of: 1. Eating breakfast every day. 2. Eating a variety of whole grain products, fruits and vegetables, low fat milk, and calcium-rich foods for meals and/or snacks. Goal 2: Students will apply skills consistent with USDA guidance related to eating and physical activity for good health. Objective: As a result of Pennsylvania s SNAP-Ed plan, students will be able to: 1. Assess personal health practices. 2. Develop a goal to adopt, maintain, or improve a personal health practice. II. Educational Standards: A Concepts of Health B Food Science and Nutrition C Healthful living III. Outcomes A. Students will describe the importance of eating a healthy breakfast. B. Students will list the health benefits of eating a well-balanced breakfast. C. Students will demonstrate understanding of the dietary guidelines by choosing a breakfast consistent with recommendations. D. Students will define the importance of calcium in our diet. E. Students will list a variety of calcium-rich foods. IV. Materials A. Healthy Ideas questions for icebreaker and container to draw questions from B. Visual: MyPlate/MyPlate for Kids poster, and Wind up toy C. Activity: Breakfast match game question and answer index cards D. 2 E. Taste testing ingredients: whole grain cereal, low fat milk, sliced bananas F. Supplies for taste-testing: Bowls, napkins, tablecloth, trash bag G. Gloves and antibacterial wipes/gel H. Reinforcement that conveys the appropriate nutrition message I. Parent Newsletter J. Graduation invitations (see teaching aid) V. Procedure A. Introductory: 1. Icebreaker: Healthy Ideas a. Since this is almost the last club meeting, we are going to do an activity to remind us about all the things we have talked about. b. Pass around a container filled with many different nutrition and physical activity questions. c. Participants take turns drawing a question from the container and answer the question drawn. Other club members can help out if someone gets stuck. d. When everyone has gotten the opportunity to respond, summarize by concluding that they are certainly learning a lot about healthy foods and activities. Both food and activity work together to make us healthy. 2. Welcome a. Tell boys how great it is to see them and meet again in this all-boy s club. b. Ask for a volunteer to summarize what happened last week for anyone who is new to the club. c. Remind the boys of the goal set last week. How many tried to reach this goal? How many were successful? Why was it easy or hard to do? Encourage boys to keep trying to reach the goal if they didn t do it last week, changing it a bit if that is helpful. d. Today we will be talking about the importance of breakfast and some of the healthy nutrients we get from our breakfast foods and drinks. e. This is the last meeting since next week will be graduation. We need to do some quick planning for graduation. i. First, what was the group s favorite club recipe? That is what we will make next week. ii. Second, at the end of club each boy will get an invitation for family and friends, asking them to come to graduation. You can bring any family member or friend. 3. Importance of Breakfast as Fuel a. Brainstorm reasons why breakfast is important. b. Using a wind-up toy, demonstrate that the toy can only go so long before it runs out of fuel. Compare this to the human body, as we are the same way. We must have fuel in the form of foods and drinks to keep us going throughout the day or we will slow down and stop like the toy did. Drexel University, BC 10, Revised 08 /2014, Page 2

3 c. Remember that our bodies can not work without energy or calories. Before breakfast, the last time we have eaten was probably dinner, many hours before. Eating breakfast helps us re-charge or re-fuel for each new day. d. Students who eat breakfast do better in school, have more energy, and feel better overall. 2. Breakfast foods a. Brainstorm a list of breakfast foods the boys commonly eat. Keep a list where the group can see them. b. Discuss the results. i. Which are listed most often? ii. Which MyPlate group do the foods fit into? iii. Which ones are the healthiest choices? c. Discuss healthy breakfast options. We should be choosing items that are low in fat and sugar, and high in important nutrients like calcium, protein, and whole grains. Use the MyPlate poster as a guide. d. Examples: frozen waffle with fruit, peanut butter and whole wheat toast, cereal and low fat milk, oatmeal, 100% juices, slice of cheese on a mini bagel, low fat yogurt, piece of fruit, etc. e. Don t forget foods that may not be typical for breakfast, such as leftovers or sandwiches. These can be great morning fuel also f. Take a poll how many boys have ever eaten potato chips for breakfast? Soda? Sports drink? A package of cup cakes? g. Why are these choices not as good as the others we mentioned from MyPlate? i. High in fat ii. High in added sugar iii. A lot of calories, but very few nutrients iv. Not the best fuel to start our day 3. Important Breakfast Nutrients a. What are some of the important nutrients found in our breakfast foods? i. Calcium makes bones and teeth strong. Found in dairy products like milk, cheese, and yogurt. Can also be found in fortified juices and soy milk. ii. Protein makes muscles strong and helps us grow. Will make us feel full longer too. Found in meats, milk, and a little bit in cereals and grains. iii. Fiber healthy for the heart and keeps our digestion moving properly. Also fills the stomach so we feel full longer. Found in whole grains (oatmeal, whole wheat toast) and fruits. iv. Vitamins and Minerals important for lots of reasons. For example, make eyes healthy, boosts immune system, helps body grow properly. 4 b. A closer look at calcium i. Calcium is especially important for boys your age. Why do you think this is? ii. This mineral is a big part of our bones, making them strong and hard. It also helps them grow properly which is important for boys your age who are probably still growing. iii. Sometimes, as we get older, we can get a disease that has to do with weak bones what is this disease called? (Osteoporosis). Some of your moms or grandmothers may have this. It can lead to bones that break easily or backs that are not straight. iv. It is important to put enough calcium in our bones while we are young so that our bones can be strong for the rest of our lives. v. We named a few breakfast foods that have calcium what were they? (milk, yogurt, cheese, special juices) vi. What are some other foods that have calcium that we may not think of? (Low fat pudding, low fat cottage cheese, beans, almonds, greens, broccoli) vii. Look at MyPlate. How many servings of calcium rich foods from the dairy group should we be getting every day? About Making Time for Breakfast a. Many students skip breakfast for various reasons. What are some of these reasons? Don t have enough time, don t like the food I have at home, makes me feel sick, etc. b. Discuss ways students can solve these problems i. Get up earlier ii. Move faster when getting ready iii. The night before, gather books and homework and make a decision about what to wear and eat for breakfast iv. Eat breakfast at school v. Have foods that are fast and easy to grab from home like pieces of fruit or granola bars vi. Eat a small amount of healthy foods vii. Ask to go along on the next trip to the store to pick out some good breakfast items. B. Developmental 1. Breakfast Match Game a. Explain that the group will now do an activity to see what they have learned about breakfast and to learn some new things. b. Divide students into two groups and place one group on each side of the room. Give one group question cards and give the other group the corresponding answer cards. Not all pairs have to be used. Pick those that best suit the group. c. When the educator says go, the students should try to find their match, either the answer to their question, or the question that precedes their answer. 5 d. When a match is made, the students should remain together until all other matches are completed. e. When all matches are made, discuss the results using the answer key in the accompanying Teaching Aid 2 as a guide. Some students may need a second round to find their correct match. C. Concluding 1. Discuss one goal the group can set for the upcoming week about breakfast. Make it something realistic and attainable (Example: I will try to eat breakfast 3 times this week.) Write this goal down so it can be discussed next week. If desired, keep a running list of weekly goals. 2. Distribute the reinforcement, read the message and/or explain why they are getting the reinforcement. 3. Distribute newsletter. 4. Thank boys for coming. Remind them to choose healthy breakfast items this week. D. Taste testing: Cereal and Milk 1. Give out job cards to divide preparation tasks 2. Students are to wash hands or use antibacterial wipes/gel if no sink available 3. Distribute gloves to preparation helpers 4. Prepare cereal and milk and top with sliced bananas 5. Sit down, slow down, savor and enjoy! 6. While eating, talk about breakfast on the weekends. How are our habits different then? 7. Everyone should help clean up by putting things in trash bag and cleaning up any spills or dropped food. Drexel University, BC 10, Revised 08 /2014, Page 5

6 JOB CARDS FOR SNACK PREPARATION (cut out and place in container to be drawn at random) 1. Spread out the tablecloth 2. Arrange the bowls, spoons and napkins in piles on the serving table 3. Open the box of cereal. Use the ½ cup scooper to put cereal into each boys bowl 4. Pour some milk over the cereal. Be careful not to spill! 5. Open the banana coins container and put in a serving spoon. If everyone wants bananas, you can help serve them too. 6. You are the clean up patrol. 7 Healthy Ideas Questions Cut out these questions and place in a container. Club members will take turns drawing and answering a question. Elicit help from the other members if needed. What is one reason why kids your age should exercise more? What is one thing to do instead of watching TV to be more active? What is one way to exercise indoors? What is one example of a whole grain food? What is one reason we should eat plenty of whole grains and fiber? Name a red fruit and a red vegetable Give a reason why fruit is healthy. What is something you can do at a fast food restaurant to cut back on fat? Name one way to cut back on fat when you are eating at home. Why is eating too much fat unhealthy for us? Name a healthy type of fat. Name an orange vegetable and an orange fruit What is one reason why vegetables are healthy?

8 Name a yellow vegetable and a yellow fruit. About how many servings of fruits and vegetables should we have each day? Name one healthy drink you can have in place of soda What is one health problem that can come from eating or drinking too much sugar? Name a green fruit and a green vegetable Name a purple vegetable and a purple fruit. Give a way boys your age can eat more vegetables What is a healthy choice in a fast food restaurant? Name a lower sugar cereal that would be part of a healthy breakfast or snack. What is a good room in your house to snack in?

9 Breakfast Match Game Answer Key Questions and Answers (optional discussion points follow each question) 1. Question: Number of hours your body goes without eating if you skip breakfast Answer: ~ 16 Discussion: When we go without eating breakfast our body isn t getting the fuel that it needs to start the day. A car won t run without fuel, and our bodies can be thought of in the same way. If we don t eat breakfast we aren t giving our bodies the fuel they need to get a jump start on the day. What are some other problems with not eating breakfast? 2. Question: Breakfast should provide this % of daily nutrients Answer: 25% Discussion: The USDA says that school breakfasts must have at least 25% of the RDA for protein, calcium, iron, Vitamin A, Vitamin C, and calories. 3. Question: Eating a well balanced breakfast should include how many of the five food groups? Answer: 3 Discussion: Who can tell me what the five food groups are? Does anyone know the number of servings we need from each group? The groups are grains (6 one ounce equivalents and ½ should be whole grains), vegetables (2.5 cups), fruit (2 cups), milk (3 cups), and meat and beans (5.5 ounces). 4. Question: True or False: A good breakfast should include protein, carbohydrates, and a little fat. Answer: True Discussion: Complex carbohydrates (those carbohydrates that have starch and/or fiber) will help you feel energized and ready to start the day, while protein and fat will keep you feeling full and minimize feelings of hunger. What else should be part of the carbohydrate-rich foods? Whole grains, so that our bodies get some of the fiber we need for the day. 5. Question: True or False: Skipping breakfast can lead to weight gain Answer: True Discussion: Not eating breakfast can lead to overeating later in the day and over time that can slow your metabolic rate. How many of you eat more for a snack or lunch when you don t eat breakfast? 6. Question: Percentage of high school students who skip breakfast at least three times per week Answer: 59% Discussion: Think about that number. This means that more than half of all high school students don t eat breakfast daily. Why might this be a problem? 7. Question: Students who do this are more alert, have higher test scores, fewer behavioral problems, and fewer visits to the nurse s office Answer: Eat breakfast Discussion: Remember that breakfast is the fuel for our body and without it our bodies are affected in many ways. We may have headaches due to lower levels of blood sugar. What are some other problems?

Question: (optional since not all schools offer breakfast) The average number of children served breakfast at school in the US every day Answer: 8.9 million Discussion: That may sound like a lot but there are actually more than 50 million students in the US, so only about 1 out of 5 students get breakfast at school. Do you think the majority of the remaining students are eating breakfast at home or on their way to school? What do most of your friends do? 9. Question: I am a great source of protein, calcium, and add a twist to a normal breakfast: Answer: cheese Discussion: What are some things we can put cheese on? Whole grain toast, eggs, whole wheat bagels, English muffins. Remember it can help to fill one of our dairy servings for the day. If you had cheese and whole wheat toast with a glass of 100% orange juice you could easily fit three of the five food groups into your breakfast. 10. Question: Unscramble this word: AALOTME Answer: Oatmeal Discussion: Oatmeal is a wonderful breakfast food. It contains fiber and is a wonderful source of complex carbohydrates and B vitamins to give us the energy we need to get a jump start to the day 11. Question: Unscramble this word: OTEELSRFV Answer: Leftovers Discussion: How many of you normally have leftovers from dinner the night before? Why not eat them for breakfast? Think about it! It s already prepared and may just need to be heated up. If it s in a container take it with you and eat it on the way to school. 12. Question: Unscramble this word: TISINVAM Answer: Vitamins Discussion: Vitamins are a very important part of our daily needs. What are some breakfast foods we can eat or drink that are high in vitamins? 100% fruit juice, whole fruit, whole grain cereals, milk 13. Question: Amount of calories in an English muffin and two scrambled eggs from a fast food restaurant Answer: 330 Discussion: See Question Question: Amount of calories in a sausage muffin sandwich and hash browns: Answer: 590 Discussion: Let s also look at the fat content between the two; how much fat do you think is in the first meal? What about the second? The first meal only contains 13 grams of fat and the second meal contains 29 grams of fat. That is more than twice the amount of fat. So remember that even if we have to grab something from the store or restaurant we can still make healthier choices. What could you have to drink to make this meal even better? 100% fruit juice or reduced-fat milk

11 15. Question: Leanest breakfast meat Answer: Canadian bacon Discussion: Remember that some meats are healthier (lower fat) than others. What are some other lean meats we could eat for breakfast? (turkey bacon, turkey sausage, ham) 16. Question: Contains about 50% fat Answer: Doughnut Discussion: Does a doughnut contain three of the five food groups we need? Does it contain 25% of our daily nutrients? If no, then this is something that we want to save for a breakfast treat. (Some schools serve super-fortified doughnuts or pastries for breakfast. These foods meet the school breakfast requirements but are not the best examples of a well-balanced meal.) Does anyone know what kind of calories we call a doughnut? They are called empty calories, because we are getting the calories but we aren t getting the nutrients that our bodies need when we eat a doughnut for breakfast. Remember, save foods like doughnuts as a sometimes breakfast food.
