Choose three possible (nutritional) changes to make this meal healthier. B. Work out how much difference each change would make for a customer. C. Make a chart, graph or table to show your findings to the supervisor. D. Check your calculations are correct. Show at least one example of a check you have done E. Choose two of the changes to recommend to the canteen supervisor. Give reasons for the changes you recommend, using the information you have found out. F. 17 Information pack page 2 Healthy eating information Healthy eating advice A healthy diet contains lots of fruit and vegetables, and wholegrain bread, pasta and rice. It is low in fat, salt and sugar. 5 tips for eating well 1. Base your meals on starchy foods such as bread, cereals, rice, pasta and potatoes. Try to choose wholegrain varieties whenever you can. 2. Eat lots of fruit and vegetables. Try to eat at least 5 portions of a variety of fruit and veg every day. 3. Eat more fish. 4. Cut down on fat and sugar. 5. Try to eat less salt. Make a difference to your food today How to reduce fat Use the same quantity of a low fat ingredient instead of a high fat ingredient to save on calories and fat. The way you cook foods can also lower fat content. For example: Ingredient Alternative Cheddar cheese Low fat cheese (save 150 calories, 20g fat per 100g) How to reduce sugar Sugar contains a lot of calories. You can cut down sugar by a quarter in most recipes without spoiling the food. How to increase fibre Use wholemeal flour. It has six times as much fibre as white flour. Alternative cooking methods Try grilling, baking or steaming instead of deep frying to reduce fat and calories in food. 3 Functional Skills Mathematics Level 2 Healthy Eating
18 Information pack page 3 Information about the calories, fat, fibre and salt in some common foods Food Calories Fat grams (g) Fibre grams (g) egg (medium) semi-skimmed milk (100ml) olive oil (100ml) cheese (100g) low fat cheese (100g) plain flour (100g) wholemeal flour (100g) sugar (100g) tinned tomatoes (100g) fried onion (100g) microwaved onion (100g) yeast (100g) salt (100g) water (100ml) Functional Skills Mathematics Level 2 Healthy Eating

To keep down the fat, choose plain boiled potatoes or jacket potatoes, instead of chips or mashed potatoes. Look at the difference when you cook 100g of potato: Boiled potato Jacket potato Butter (5g) Mashed potato (with milk and butter) Oven chips Deep fried chips no fat no fat (unless you add butter or fillings) 4g fat 6g fat 5g fat 15g fat 5 Functional Skills Mathematics Level 2 Healthy Eating
