2 RUMEN FUNCTION IS THE DRIVER The rumen microbial population ferments feedstuffs to produce volatile fatty acids (VFA), which are the major sources of energy for cattle. Total VFA production and the proportions of acetate, propionate and butyrate affect the amount of energy available to the animal. Production of more propionate is beneficial because it is converted to glucose by the animal more efficiently than other VFAs. Acetate is the least energy efficient VFA and the most costly in terms of carbon lost to methane and other greenhouse gases (GHG). Shifts in rumen fermentation that lower methane and GHG production is also a plus. The rumen is also the site of degradable rumen protein utilization and where ammonia-nitrogen is released. Rumen ammonia-nitrogen is incorporated into microbial protein; however, release of too much ammonia nitrogen is inefficient and may have a negative effect on animal health. Additionally, high ammonia-nitrogen can contribute to environmental pollution when excreted via urine. Capturing more ammonia-nitrogen as microbial protein supplies additional amino acids to the small intestine for incorporation into meat and/or milk. Since rumen fermentation is the driving force impacting energy and protein availability for ruminants, management and nutritional strategies that can positively impact this natural function can be highly advantageous for more economical production from ruminant animals, such as cattle and goats.
