2 Dietary exposure assessment Food Research Institute, Bratislava (Centre for Evaluation of Contaminant Occurrence) Partial Information System on Contaminants Partial Monitoring System "Food and Feed Contamination : Coordinated Aimed Monitoring (1991) Market Basket Monitoring (1993) Monitoring of Game and Fishes () Database on Occurrence of Contaminants in Food: 8. millions of input sentences - (2336 MB) 38 observed parameters Participation in national programs: 22 24: National Program on Health Support, (project: Exposure assessment of the population to additives and contaminants ) 23 2: National Program on Research and Progress Quality of life - health, nutrition, education, (Subprogram: Food quality and safety ) 26 29: Project of Research and Progress: Development of the progressive methods and procedures for guaranteed process of continual enhancement of quality and safety in food production and examination.
3 Selected substances: Contaminant Samples Limited exposure value Arsenic (As) Cadmium (Cd) Mercury (Hg) Lead (Pb) PCBs Nitrates PTWI (1 µg/kg bw) PTWI (7 µg/kg bw) PTWI ( µg/kg bw) PTWI (2 µg/kg bw) TDI (.4 µg/kg bw) ADI (-3.7 mg/kg bw) Criterion for selection: Results of toxicological studies References on health risk International recommendations Course of the food surveillance system Technical diagnostic potential in SR List of priority contaminants in foods (GEMS FOOD/WHO) Patulin 81 PMTDI (.4 µg/kg bw) Pesticides 399 ADI, TDI, RfD, OSF Observed commodities: Water Plant raw material Animal raw material Foodstuffs Export, import The samples of commodities: Agricultural holdings Food industry enterprises The retail network and Households Food Research Institute, Bratislava State Veterinary and Food Administration Dairy Research Institute, Žilina Administrations of Public Health Slovak Medical University, Bratislava

Duration Average body weight of the inhabitant Exposure - [µg.kg -1 b.w. and week or day] Concentration - [µg.kg -1 ] 1 - n the order of particular commodities and respective findings 1, 2, 3 the mean, median and 9th percentile values of contaminant concentration Duration 1 day or 7 days Average body weight - 7 kg for adult consumer; 18 kg, 33. kg, 47 kg for children. Data on dietary intake: Actual consumption - Statistical Office of SR Rational consumption Modelled Consumption of children Modelled Data on chemical residues: Inspection results (since 1986) Coordinated Aimed Monitoring (since 1991) Market Basket Monitoring (since 1993) Monitoring of Game and Fishes (since ) Average adult inhabitant of the Slovak Republic Various age categories of children: pre-school children (4 6 years) younger school-age children (7 11 years) senior school-age children (12 1 years) Limited exposure values (PTWI, ADI, TDI...) Evaluation of the exposure: in annual cycles

7 Strengths and weaknesses: Weaknesses: Mathematical models are only an approximation of the reality; Strengths: The results obtained from exposure assessment - basis for the identification of significant sources of dietary exposure Information on food chain contamination at regional or national level. Strong basis for formulation of recommendations for changes of limit values according to national dietary habits in the interest of the population health. Future plans: Current program of surveys: modeling of dietary exposure dynamics, time series and forecasting of future exposure levels.
