32 About Ferrous sulphate (iron salt) Ferrous sulphate absorbs only when soluble which requires Ph <3 Can t be reached by those with low acid, or using acid blockers Buffering around pancreas crystallizes F sulphate so can t be absorbed Chelates may not be so ph dependent thus absorbed over a great surface which may explain fewer side effects (Dr. Bortz) Iron is very toxic thus it must always be wrapped in a protein in transport or storage (chelated) Body has no effective way of getting rid of iron Phytates/Tannins/polyphenols in tea complex with iron to prevent absorption Chelate is like a Trojan Horse You can inject a chelator into the blood to get rid of excess iron and reduce its toxic effect Chelate must be strong enough to protect the iron from inhibitory substances in the stomach but not strong enough to hold onto it all the way down the GI tract which is what occurs with these chelates. 32

33 About Ferrous sulphate (iron salt) Smaller AA are especially effective chelators as they are nutritive and not too large etc. Food iron is FERRIC form which is oxidized (red hill tops is from oxidized iron in the soil) Can only be absorbed by an enzyme that reduces it to a Ferrous which is soluble FERRIC >FERROUS (can get 3 mg daily max) FERROUS form taken with food can be complexed with phytates etc. so absorb much less because of this. Taking iron AWAY form food of any kind is better as it reduces the chances of being bound up with food phytates/tannins/polyphenols but it is 5x less bioavailable in salt form than chelate 33
