Prerequisites for NFSC 642 include passing an advanced human nutrition course and a biochemistry course. Specific Course Goals At the completion of the course, the student will be able to: Explain in detail information on the structure, function, digestion, transport, storage, and utilization of key vitamins and minerals. Distinguish the metabolic pathways that the key vitamins and minerals are required and to explain the interrelationships among these nutrients. Deduce the physiological basis of the key vitamin and mineral deficiencies and excesses. Develop a thorough understanding of the key vitamin and minerals by organizing and presenting an oral seminar to a group of one s peers in a logical, sequential and professional manner. Interpret data and assess the scientific worth of nutrition related research articles in scholarly scientific publications. Student Rights and Responsibilities Add and dropping a class. University policy states that Add/Drops must be completed within the first two to four weeks of the semester. Following this time period, students must have a serious or compelling reason to add or drop a course. It is the student s responsibility to add/drop classes, not the instructor s. Chico State Emergency Notification System. Etiquette and Expected Behaviors Collaborative methods will be used in class. If you know you are going to be absent, contact your class partner(s) and me. You are expected to come to class on time. If you have to leave class early please inform me before class and sit in the back or on the side so you can make a quiet exit. During lecture you are expected to keep talking (personal comments to fellow students) to a minimum and you are to treat all members of the class with respect. Additionally, cell phones should be turned off during class time. Should a student anticipate an emergency call during class time, it is the student s responsibility to notify the instructor in advance of the class and to make arrangements accordingly. Additional labs may be available in your department or college. Access to Blackboard Vista Course Policies 1. Quizzes will be taken at the scheduled class time. No make-up quizzes will be given without prior communication with instructor and written medical verification (from a physician) with date and provided upon return to class. If you miss a quiz without informing the instructor, you will receive a zero and will not be allowed to take a make-up. Quizzes are closed when the first student leaves the classroom. 2. Assignments are due in class on the day scheduled/determined for full credit. 3. Assignments are due before lecture or in the first 5 minutes of class. Assignments turned in late will have 5% of the points deducted for each calendar day late. NFSC 642, Fall 2008 page 3 of 6

4 Assignments and grading 1. Quizzes. Quizzes will only be in essay format. Quizzes are divided into two parts: part 1 is independent work and part 2 is shared with a partner. 2. Research article challenges. These take home assignments are to help facilitate data interpretation, identifying limitations to study designs, and writing abstracts. 3. Research article presentations. Students will find two original research article related to micronutrients of the students choice. The presentation is limited to about 30 minutes. Students must use PowerPoint for their presentation. The instructor will provide information to choose an appropriate article for discussion in class. On the day of the seminar each student will give his or her peers an outline of topics to be discussed and a list of references for additional readings on the specific micronutrient. The instructor will provide specific instructions on the content of the student seminar in class. Guidelines will be distributed. Assignments Points Percent Four quizzes approximately at 25 points each Two research article challenges at 25 points each Two article presentations at 75 points each Total points The final grade earned will be based on completion of all assignments, and demonstration of an understanding of nutrition concepts. Identical assignments, plagiarized assignments and/or identical responses on exams will not be graded and students will receive a zero. Grade Percentage Performance Characteristics A s Demonstrates outstanding comprehension of the subject matter. Sees many sides of an issue. Integrates ideas previously learned from this and other disciplines; anticipates next steps in the progression of ideas. Articulates well and writes logically and clearly. Accomplishes more than the minimum requirements. B s Demonstrates proficient comprehension of the subject matter. Speaks and writes well. Accomplishes more than the minimum requirements. C s Demonstrates satisfactory comprehension of the subject matter. Communicates orally and in writing at an acceptable level for a college student. Accomplishes the minimum requirements, and may display little or no initiative. D s Demonstrates inadequate comprehension of the subject matter. Quality and quantity of work is below average and barely acceptable. F 59-0 Fails to demonstrate satisfactory comprehension of basic concepts. Quality and quantity of work is unacceptable.
