Milk 2 tsp. Grated Capricious Goat Cheese (or Parmesan) Freshly ground black pepper In a bowl, combine the eggs and milk. Heat a skillet on medium to low heat, add the spinach and saute until wilted. Pour the egg mixture over the spinach and allow to set around the edges. As the edges set, lift them gently with a spatula and tip the skillet to allow remaining liquid underneath.
