5 Page 5 Tuna Farfalle 2 cups dry farfalle pasta 2 tablespoons olive oil 2 cloves garlic, minced 1/4 teaspoon red chili flakes 1/4 teaspoon ground black pepper 1/2 cup artichoke hearts (packed in water), drained and diced* 2 cans (170g each) tuna (packed in water, unsalted), drained 1 cup arugula 1/2 cup parsley, washed and chopped 2 tablespoons lemon juice 1 tablespoon parmesan cheese, grated *artichoke is a high potassium vegetable and should be enjoyed in moderation Preparation 1. In a large pot, bring water to boil and cook pasta according to package directions. 2. Heat oil in a large skillet over medium heat. Sauté garlic with chili flakes and black pepper (2 mins). Be careful not to burn the garlic. 3. Add artichokes, tuna, arugula, parsley and lemon juice to skillet and cook until arugula wilts. 4. Add the pasta to the sauce and toss it. 5. Sprinkle the past with parmesan chees and serve. Preparation time: 20 minutes Cooking time: 10 minutes 4 servings This recipe from

6 Page 6 Passing the Time ~ how do you pass the time on dialysis? Kidney disease is never a fun time. One of the greatest challenges for people who are on hemodialysis, is how to spend our time while hooked up to a machine for hours. If a person has a fistula, there is less chance for movement because keeping the arm still is important. Patients want to keep the needles in the fistula in place, working well. If a person has a CVC (a central line), it s a bit easier because patients can use hands to do more things. I have a central line, so I pass the time knitting or crocheting while I watch movies and TV on my Ipad. I m only on for 2 hours at a time every day, but I have to keep still for 2 hours at a time. I interviewed some patients at the Stoney Creek site recently asking them the question, How do you pass the time while you are on dialysis? The following is a sample of the responses. Jeannot: I have a tablet and watch movies or listen to music. I have 200 albums to choose from. Richard: I go on my laptop (a notebook) and like to go on Facebook. Radmila: I watch TV and sleep. Jim: I read on a Kobo. Right now, I m reading James Lee Burke s newest book, Light of the World. I also listen to classical music. Don: I pass the time reading. Currently, I m reading Night of the Jaguar by Michael Gruber. Usually, I buy books second hand. Arlene: I watch TV. My favorite program is Criminal Minds. I get two hours of that and then watch the Food Network usually, Chef Michael Smith. Larry: I bring a laptop on which my son downloads movies. My son also visits. Three of my family members have been on dialysis so they know what it s like to spend hours on a dialysis machine. Angie: I use the internet on my phone. I also like Facebook, play games and find recipes.

7 Page 7 Spring 2014 Passing the Time.. continued Sharon: I watch TV. I like my soaps and the Food Network. I also sleep and exercise with a bike as part of an exercise study done at the hospital. Mark: Usually I talk to other patients, socialize with the nurses, watch TV and depending on how I feel, sleep. I used to have a visitor who played cribbage with me. Pierre: I watch TV and nap. I watch Rachel Ray, Let s Make a Deal and The Price is Right, then I m the heck out of here! Michelle: I play games on my phone, watch TV and read. I also socialize with other patients. I like to bug the nurses as well. You re like a family here. Anonymous: I watch TV. Pam: I use a laptop or use my cell phone. My husband visits and I also socialize with other patients to help them pass the time, too. Any other suggestions? Please let us know if you have any great ideas.
