1 E-MILK ISSUE 35, February 2003 STELA S BIENNIAL SYMPOSIUM Milk Better Quality Through Research The STELA Research Centre will be holding its biennial symposium on April 28 and 29, 2003, at Hotel Quebec in Sainte-Foy. The two-day event will be offering conferences aimed at highlighting the important role research plays in the quality of the dairy industry. We hope that the symposium will provide a forum for communications among dairy processors, government stakeholders and research scientists. An inaugural distinguished lectureship will top off each day of the symposium (i.e., Helen Bishop MacDonald of the Dairy Farmers of Canada, on Monday and Dr. Morsi El Soda of the University of Alexandria, on Tuesday) followed by conferences from STELA s regular research staff and associates. A visit of INAF s new pavilion and the pilot plant with stopover stations to provide information on its facilities and research projects will also be offered on the first day of the symposium. The visit of the INAF and its new clinical research facilities will give us an opportunity to appreciate one of our major research partners. Presented below is the detailed program. A NEW COLUMN A new column entitled Eye on technology transfer will now appear in E-MILK. Through this column, we will showcase research findings from the STELA Research Centre that could lead to applications, which are potentially transferable to the industry. We are pleased to present our first Eye on technology transfer on milk fortified with CLA. We hope you enjoy it! EYE ON TECHNOLOGY TRANSFER: MILK FORTIFIED WITH CLA What has been done: Dr Yvan Chouinard, Researcher at the STELA Research Centre, managed to naturally increase the levels of CLA (conjugated linoleic acid) in commercially available milk by manipulating the feeding habits of 254 cows (from 12 different herds). In fact, Dr. Chouinard was able to obtain CLA levels that were four times as high as those usually found under normal conditions all that without affecting the health of the animals or their milk production. Given that milk fat is already the most abundant dietary source of CLA, a natural fat known for its many biological activities (i.e., anti-cancer agents), the production of CLA-fortified milk could make it 4
5 possible for the dairy industry to develop milk products with properties specifically adapted to particular market niches. What happens next: Work is far from over. Before this type of milk is mass-produced, we have to determine the impact it will have on production and transportation costs, adapt milk transformation processes, develop a marketing plan, and get approval from Health Canada of the health claims concerning the benefits of CLA.
