RECIPES TO TRY BREAKFASTS BREAKFASTS OVERNIGHT OATS 5 SERVINGS 3 cups rolled oats cups raspberries/blueberries + 4 cups almond milk + cinnamon to taste Mix all ingredients together in a bowl, store in the fridge overnight. Take a scoop out each morning the mixture will last a few days in the fridge. PROTEIN MUFFINS 5 SERVINGS 5 eggs cup kale courgette cup feta cheese cubed + 1 lemon + milk if needed Pre-heat the oven to 180 C. Whisk the eggs together, grate in the courgette & lemon zest, stir in the kale & feta. Add milk if mixture is too dry. Pour into a greased muffin tray. Bake for 15 mins or until the tops are firm to the touch. These store well in the fridge. GREEN SMOOTHIE 1 SERVING 1 small ripe banana + 1 cup milk + 2 handfuls of spinach + ice if desired Whizz all ingredients together in the blender. COOK ONCE, EAT TWICE... Or three or four times.
