Our product range has been developed by the Research & Development Centre of the Dr. Schär Group, which has over 30 years of experience in the development and production of special dietary products. MEVALIA Low Protein offers a wide range of products to satisfy both taste and nutritional requirements. Very low protein content: All MEVALIA products have a protein content of below 1%. Low phenylalanine values: The concentration of amino acids, in particular phenylalanine, is low in all MEVALIA products. Excellent sensory qualities: MEVALIA products are characterised by their excellent palatability, which enables consumers to follow their special diet without compromising on taste. High fibre: MEVALIA bread, bread substiutes and pasta are high in fibre. 2 3

4 NUTRITIONAL DIETARY TREATMENT Inherited metabolic diseases To date, very low protein diet therapy is the main form of treatment for many inherited metabolic diseases, such as phenylketonuria (PKU). Dietary treatment, which is started a few days after birth and continued for life, allows a baby with PKU to develop normally. It consists of: following a diet which excludes rich sources of protein such as meat, fish, eggs, cheese, nuts and legumes monitoring intake of amino acids/essential amino acids, depending on the condition avoiding consumption of the sweetener aspartame (source of phenylalanine) consuming enough fibre so that the individual still feels full HOME DELIVERY SERVICE Mevalia and Dialachemist have teamed up to bring you a great home delivery service. 6 THE SECRETS OF LOW PROTEIN FOOD MEVALIA BREAD... DELICIOUS AT ALL TIMES BREAD & SNACKS To add flavour to the food, add aromatic herbs, lemon juice or balsamic vinegar Coat the food in breadcrumbs, using grated low protein bread (crumbled Crostini or Fette Biscottate) or coat the food with low protein flour before cooking it; The Burger Mix is a versatile product that varies according to the degree of hydration. If you want a minced meattype texture, use around 60 grams of water for every 100 grams of Burger Mix. Always cook pasta in lots of water, as it actually tends to absorb a lot of it whilst cooking. Sift the Bread Mix before making the dough in order to avoid lumps. For leavened dough, you need to maintain a soft texture: greasing your hands or utensil with oil will prevent the mixture from sticking and will be easier to work with. 8 9

17 BASIC RECIPE BREAD Ingredients: 250 g Bread Mix one pinch of salt 5 g dried yeast 15 g oil 300 ml water Preparation: Mix the Bread Mix, salt and dried yeast together, add the oil and water and continue to mix for several minutes with a hand blender to form a smooth mixture. Oil a rectangular baking tin and sprinkle with Bread Mix, fill with the mixture and smooth out the surface using the back of a wet spoon. Cover the baking tin with a piece of clingflim covered in oil. Leave the dough to stand for 30 minutes in a warm place.
