2 Why buy into Gluten Free? We are coeliac We suffer with IBS We consume too much wheat: (gluten free must be better) We believe it s healthier We believe It improves energy levels We believe It helps us to lose weight Celebrity Culture
3 Millions of People are Avoiding Gluten as a Lifestyle Choice believing it is better for us Gluten Free food contains up to 14 times more fat and much higher amounts of sugar than some gluten equivalents Unlike wheat flour gluten free flours are not fortified Processed gluten free food diets are even less healthy than carbohydrate rich diets Wheat free products rarely carry additional health benefits and can contribute to weight gain and type 2 diabetes
4 Why is Gluten Free Processed food so Unhealthy? Its high in fat Its high in sugars Its high in refined starch Treacle or caramelised sugar is to help colour white bread brown and deliver the taste of brown bread (rather than the inclusion of healthier gluten free brown flours) Over use of E415 xanthan gum (derived from vegetable rot) *This controversial food additive is a viscous glue with a bitter taste and zero nutritional value. Some people can t digest it.
5 The Enemy? Wheat or Refined Starch? We need starch for energy but most of us consume too much It is found in potatoes, wheat, corn, rice and some vegetables Complex starches are good for us Refined processed starches are not Starch is abundant in flour Refined starch eg processed white flour has a low nutritional density and is used to make bread, pasta, crackers, cakes etc. Starch not used by our bodies for energy is stored as fat
6 A Gluten Free Label is no Guarantee of Virtuousness! Read Labels Carefully: Example: Purebred Multigrain Farmhouse Loaf sounds healthy and it is low fat and contains fibre. But it has added treacle (instead of brown flour), and has the addition of SIX food additives E460ii - cellulose E464 - hydroxypropyl methyl E466 - carboxymethyl cellulose E415 - xanthan gum E281 - sodium propionate E200 - sorbic acid
7 Watch out for health buzz words.. Junk food with Gluten Free on the label is still junk food A Gluten Free label is no guarantee of virtuousness
8 Use less fats and sugars? (achieved with sodium) Use healthier brown gluten free flour not treacle? Use high fibre ingredients instead of viscous glues and additives to replace gluten?
9 What Else Could Manufacturers Do? (Notwithstanding eliminating E415 & treacle, reducing fats & sugars) Invest more in NPD to improve nutritional density Focus more on our wellbeing (not just aesthetics, taste and profits) Use fewer highly refined white flours and more nutritious brown flours Fortify flours as with wheat flour Replace palm oil (disguised as vegetable oil) with rapeseed and sunflower oils Eliminate/use fewer artificial colours, additives and preservatives
